Quinoa Pasta Recipe

Hello, dear OYL readers!

Today I want to share you with a pasta recipe. MMM! Who doesn't love pasta?! Good news is that this recipe is tasty AND healthy! No heavy cream, no butter, no frying, sauteing or grilling involved. It is so healthy, you can enjoy it every day if you want to:)

So, what makes it so healthy? It is the type of pasta that I choose for this recipe: quinoa pasta! I love "Ancient Harvest" brand. It is made with a blend of organic non-GMO corn flour and organic quinoa flour. It is gluten-free. It comes in different shapes and colors (colors are made with added dried red bell pepper and dried spinach! How cool is that?!)

AND.. What makes it extra healthy is my pesto sauce and added veggies! Take a look:

Pesto sauce:

  • 1 cup spinach
  • 1/2 cup parsley
  • 1/2 cup basil
  • juice 1/2 lemon
  • 2 TS Olive Oil
  • 2 cloves garlic
  • sea salt + pepper

Place all ingredients in a food processor. Blend well. I like to add a touch of  cooking water saved from boiling a pasta, to make it a creamy consistency. Set aside.

Veggies:

  • 1 tomato
  • 1 bell pepper
  • olives
  • green onions

Chop all the vegetables. Set aside.

Directions:

Cook quinoa pasta according directions. When its ready, reserve 1/2 cup of cooking water for pesto sauce (see "PESTO" above). Drain pasta and return to the pot immediately. Add Pesto and veggies into the pot. Cover with lid and shake well. Serve immediately. Enjoy!

ProBiotics: The importance of a good bacteria

What are probiotics? Probiotics are good bacterias that everyone has in  their bodies. Their role is to fight "bad guys" who enter in our body from the outside such as  toxins, antibiotics, pharmaceutical drugs, viruses, E.Coli, fungus to name a few. If we dont have enough good bacterias, we fell sick and all sorts of problems start to resurface such:

  • feeling bloated
  • indigestion
  • infections
  • chronic fatigue
  • depression
  • loss of memory
  • irritability

That's why probiotics play essential role in our health and overall feeling. I personally take my probiotics every morning with a glass of water with lemon. Over a years I've been trying and testing different brands. So, I'm very happy to finally found one that I really love and seems to work wonders.

"Ascended Health" created a wonderful live probiotics that comes in liquid form. Which makes sense to me, since those "guys are alive" it is better to have them in liquid form then in powder or pills. Don't you agree?! Also, since it is in live form , you have to store it in a fridge!

Label says take 1-5 drops in a glass of water. I always test products before I share with you guys, so I found it is better to start with 2 drops in a big glass of water and then SLOWLY  build your way up to 3,  4 and eventually  5 drops.

Other sourse of live probiotis are:

  • wheat grass juice (please, read my post about wheat grass)
  • spirulina
  • kefir
  • sauerkraut
  • kimchi
  • natural yogurt

Health benefits of taking probiotics:

  • enhanced immunity
  • better digestive health
  • improves inflammatory conditions such as arthritis, asthma, eczema, heart disease and chronic fatigue
  • in intestines, probiotics produce vitamin B6, niacin, folic acid and vitamin K
  • boost metabolism
  • burn fat
  • stabilize blood sugar

Bok Choy Salad Recipe with Rosemary-Lemon dressing

Hello, my dear OYL readers! Today I'm sharing another delicious  salad recipe. This time I use Bok Choy as a base of the salad.

But what makes this salad very special is a dressing! I use lots of fresh rosemary for this recipe, making it very fragrant and super yumm!

Bok Choy, also known as Chinese Cabbage, contains glucosinolates, a component that helps fight cancer.

Bok Choy is a great source of vitamins A, C and K. One cup of shredded raw Bok Choy  contains half of your daily requirement  for each of these nutrients. Pretty cool, hah?!

Rosemary is exceptionally  rich in B-complex, as well as Vitamin A and iron. And Rosemary is very hood for your brain!  "Since rosemary contains rosmarinic acid as well as other essential antioxidants, it helps to prevent the breakdown of an important neurotransmitter responsible for helping with brain function".
So, lets get started!

Ingredients:

  • 1 head  Bok Choy
  • 1 red bell pepper
  • 1 tomato

Dressing:

  • few  fresh rosemary*** leafs
  • juice 1/2 lemon
  • 2TS Butternut squash oil* (substitute to Olive Oil/Hemp Oil or Flax Seed oil)
  • 2 cloves garlic
  • pinch of Sea Salt

Directions:

Chop Bok Choy, bell pepper and tomato. Place it in a large bowl. In a blender** or food processor place all 'dressing' ingredients and blend well. Pour salad dressing over the veggies. Sprinkle 1 TS of ground flax seeds (it's optional , but I always try to add flax seeds whenever I can). Mix well. Ready!

* For those who lives in New York, you can find Butternut Squash Oil at "The Filling Station" in Chelase Market. It is one of my favorite places to shop for innovative oils.

**I use my super cool TRIBEST BPA-free portable blender. It's much smaller then regular blender, so it is perfect for traveling. Aslo I like to grind my flax seeds and cacao nibs in it. And, ofcours, I use it to preper dressings for salads like today.

*** If you are pregnant or breast feeding, do not use rosemary.

Mulberries: Superfood from Turkey

Have you heard about white mulberries? I haven't till I discovered a Raw Food!  Let me tell you alittle about this superfood from Turkey. It is super nutritious, that's why it's called a Superfood, but also it tastes so good! I found mulberries in my healthy food store. When purchasing , look for sun dried  and organic.

Sundried mulberries are sweet and crunchy. They are high in vitamin C, iron, calcium and protein. In fact, they are one of the few fruits to be  considered a respectable source of protein - 3 gramms of protein per once.

Mulberries also contain a high concentration of Resveratrol (also found in red wine grapes) - an antioxidant compound that fights free-radical damage.

In Chinese Medicine, mulberries are classified as a blood tonic.

Mulberries haver been used medicinally to:

  • Benefit the kidneys
  • Treat weekness and fatigue
  • Correct anemia
  • Premature gray hair remedy
  • Fight against cancer
  • Promote sleep
  • Calm the mind

WOW! I want more of those fruits in my diet! Don't you?! Im eating them right now as I'm typing this post:) I love to eat them in the morning for breakfast.

I call it "Mulberry Granola"

  • 1  Honey Crisp apple
  • 1 Valencia orange
  • handfull of mulberries

Cut up apple and orange in small pieces. Add dry mulberries . Ready!

Interview with Mimi Kirk - the raw food diet enthusiast.

Curious about raw food diet and its benefits? I interviewed a 73 year old Mimi Kirk - the raw foodist, winner of an annual contest "Sexiest vegetarian over 50" and an author of    "Live Raw" the  raw food recipe book.  She shares with us her skin care routine, her exercise, a basic raw food recipe for beginners and her thoughts on the date December 21 2012.

You won an annual contest "Sexiest vegetarian over 50". Congratulations! You were a vegetarian for over 40 years. Why did you decide to "go raw"?

I went raw after finding out my blood pressure and cholesterol were up, and I started feeling little arthritic pains in my joints.

Once you went from cooked vegetarian to raw-vegan, did you notice any physical changes?

It really seemed the changes were very quickly noticed. My skin looked better, and I just looked younger. I certainly felt younger and after 6  month, my doctor said my cholesterol was down 26 points and my blood pressure was normalized, and I've never felt an arthritic pain since going raw.

How do you stay motivated?

the results of how I felt and looked eating raw foods, and of course my age was enough motivation. I felt if I didn't change my diet, even though I thought I ate healthy, I could get worse as I aged, so it was easy for me to make the commitment.

What recipe would you suggest, from your book, for someone who is new to raw food?

I like to encourage people just starting out to fix a green juice or smoothie every morning. Don't give anything up, just add the drink. slowly you will notice how good you feel having this nutritious drink will help you transition. Then have a salad for lunch, eat a cooked healthy dinner and slowly make the change to raw. I find all raw best for personally, but if someone at 75-80% raw, that would make a big difference in one's health.

A basic green juice contains 2 apples, 4-5 stalks celery, 1/2 cucumber, 3-4 handfuls spinach. Juice. If you blend, you will need to add water to desired texture. I changed this basic drink by adding berries, a banana, or other fruits in season. There are lots of green drinks and smoothies in my new book "Live Raw", raw food recipes for good health and timeless beauty.

What are your favorite places to shop for local and organic produce when you are prepering your meals?

Being a California girl, I have to give a top grade for my home town. I now live in the San Diego area and there is a organic farm stand 10 minutes from my home. They have some of the best produce I've ever tasted. I also like to support all local organic growers. I really think the produce is superior to even health food stores.

What's your skin and hair care routing like?

I use 100% coconut oil on my face and body. It is so nourishing to my skin. I even use it in my hair before I wash it. Any products that are organic and not tested on animals I will give it a try. My hair is colored in a beauty shop, they claim what they use to colr my hai, has very little chemicals,a nd since there is no smell or burning on my scalp, I tend to think that is true. My hair is very healthy beacuse of what I put in my body more then what I use on the outside.

I've read somewhere that you practice Qigong. Tell us little bit about it.

I do a varity of exercise, Qiqong is a spiritual practice as well as a external one. I also like yoga for the same reason. They both are gentle stretching with an inner balance. I also like to walk as I feel it's like a meditation.

In your opinion, what are the essencial keys to harmony living with your body and nature?

I think our bodies need nature. we should walk barefoot on grass, in the sand and feel the Earth to ground us. Being in nature is so healing. Deep breathing, and feeling the connectedness to all living things is very energizing.

There are a lot of theories about the date December 21 2012. What are your thoughts about it?

I think the world is going through a major change at the moment, but nobody knows for sure what will happen Dec 2012, its all speculations, but when I first learend to meditate at age 30, my guru mentioned the Kali Yuga happening in 2012. He said it would be a time of realization, some who are already working on this will have it easier, than those who have to adjust quickly. I think it could be an evolution of consciuosnedd, and perhaps a refinement of our mental energies. I think we live in very exciting times, and Im looking forward to experience what life has to offer.

One place that we will never see Mimi Kirk?

Jumping out of an airplane.

What's your motto?

Be kind, compassionate, laugh a lot, and give and recive love with all your heart.

Model skincare: My simple Beauty regime

The more I learn about nutrition and beauty, The more I come to understand that the secret to looking radiant is TO DO MORE INTERNALLY THEN EXTERNALLY! Meaning, eat plenty of fresh  fruits and vegetables, make your daily meals  at least 80% or more raw - less cooking, boiling, heating, microwaving, frying your food, -drink more water, take high quality oils as a supplement ( choose one of the following: raw coconut oil, organic olive oil, hemp seed oil, flaxseed oil, avocado).

Externally your beauty regime shouldn’t be complicated at all! I got rid of bunch of expensive creams. I used to spend crazy amount of money on commercial beauty products. Today,  I replaced them all with just a few products that I found work best for me:

Raw coconut oil - Coconut oil is the best body moisturizer, occasionally I use it on my face (1 drop of coco oil is all you need for an entire face).

Raw honey -  I use organic raw honey as my daily healing  mask.

Cleanser - I just discovered black Japanese soap “Deitanseki Clay Soap”. I found it while visiting  Morikami Japanese Garden in Miami. It deeply hydrates skin. Does not clog pores , gently cleanse face, especially the pores, with micro-porous active ingredients. Enriched with Kaolin Clay and selected Carbon Powder The Bentonite helps your skin retain its natural moisture.

Face moisturizer - I have a couple of different face creams.  I switch between them all the time:  “EMINENCE” Rose Moisturizer  and “Dr. Perricone” Hypoallergenic Nourishing Moisturizer .

Thermal water - I wash my face with Thermal Water, also use it as a toner before applying moisturizer.

Face scrub - I love  “REN” face scrub.

Clay mask - Again, “REN” clay mask is amazing. Or you can purchase any clay mask at your healthy food store.

Pineapple  (you can substitute it to strawberry or papaya) - I always have a fresh pineapple at home.  I use it as a peeling mask, fruit acid “eat away” dead skin cells leaving your skin looking fresh.  How to use pineapple as a peeling mask: Take a piece of pineapple, rub it all over the face. Leave it for 5 minutes. Rinse. Spray Thermal water following by moisturizer or coconut oil.

My tip - If you are going to spend money on beauty product, invest it in a really good face moisturizer, like I did :)

Coconut Acai smoothie

If you know me and if you have been reading my posts for a while, then you must know that I’m nuts for Coconuts! Ha!  But seriously, I believe that Coconut Oil is a MUST in every healthy kitchen and bathroom. I use it every single day  as a moisturizer, hair conditioner, meal supplement to name a few.

But today my post is a bout a fresh young green coconuts. The kind you get in tropical countries, where you can purchase it at every corner. Paradise for me! But I live in a City, not on a beach in Thailand,  thats Why I’m super excited about my resent discovery.

I went to my nearest healthy food store where they sell  young coconuts and purchased a couple. My next challenge was to open it! Here comes all-favorite YOUTUBE channel. I learned from this  video How To Open a Coconut. It was much easier then I thought. All you need is a cleaver knife (or a chef knife) and a practice.

It is important to know how to select a good coconut: look at the base  of a coconut. It should be white color! If you see discoloration, purple or green spots, do not buy it!

Since my discovery, I start to experimenting with different recipes that include fresh coconut water and “meat” (the inside part of a coconuts).

Here is one of my favorite super smoothie! It is very yummy and filling, full of antioxidants, vitamins and LIFE!

I always like to share a health benefits, so here it is:

-  coconut "meat" is an excelent sours of a good fat! It helps to remove stored fat from your body. The result - you are loosing weight!

- coconut water is a good sours of electrolits, which are re-charge and re-energize your body! The best sport drink that you can find.

- acai is a little purple berry that grows in Amazon.  This little purple berry is packed full of antioxidants, amino acids and Omega essential fatty acids. Its antioxidant levels outranks nearly every other food on the planet, including; pomegranates, blueberries, and goji berries.

Ingredients:

  • 1 young green coconut (water and “meat”)
  • 2 packs of Acai (I use “Sambazone” brand . It comes frozen and you can find it at every health food store)
  • 1 banana

Directions:

Open a coconut. Scoop out the "meat" using ice cream spoon. Blend water and “meat” in  a blender till smooth. Add the rest of the ingredients. Pour in a tall glass, seat back and enjoy!

Baked Apples with Raw Honey

It was my mom’s idea to make this recipe for Sunday brunch. It reminds me of my childhood, when my mom used to make baked apples for me and my sister. She used to add sugar but I introduced her to raw honey, since that she only uses honey in all her recipes.

Baked apples contains lots of Iron and Calcium, plus boost vitamin A intake.

I love versatile recipes, and baked apples are one of those breakfast/dessert/snack/brunch type of meal.

And kids will love it !

I made this early morning and my whole apartment smelled like cinnamon apple pie!

I also added an oatmeal to a few apples, It was really nice touch -  delicious way to fill you up.

Ingredients:

  • 6 gala apples
  • raw honey
  • cinnamon
  • oatmeal (optional)

Steps:

prepare apples a night before. Core the middle part, making sure its not pierce till the end (you don’t want juices to run out the other end). Sprinkle cinnamon inside, add oatmeal (optional) and finally add  a raw honey.

First thing in the morning, warm up the oven for 380F. Place apples inside and bake for 25-30 min or until honey starts to bubble on top and apples become soft to touch.

Prepare your favorite morning beverage, seat back and enjoy Sunday morning with your family. I made almond milk latte, it goes so good together with baked apples. Bom appetite!
