Gazpacho is easy to make, it is a great raw dish for when you need to cool off a bit.

Union Square Farmers Market NYC

I love to go to the local NYC farmers market. I have written stories about it many times in the past, but now I am writing an update!

What I get at the local farmers market

  • Fresh local fish from fishermen based in Long Island who fish in the Atlantic Ocean like from Pura Vida fisheries. The scallops are always super flavorful and with a great texture when I prepare them.
  • Grass fed beef from small farms upstate that work on increasing the biodiversity of nature.
  • Local honey by Andrew's honey. He has beehives all over town and so you can even get Soho or Brooklyn honey!
  • Vegetables and fruits at different stands like Norwich Meadows farm
  • organic breads from different vendors, including this delicious Moroccon bread called msmen
  • homemade jams and cheese
  • lavender and flowers

All the farmers are super nice, and it is great to see who has been taking care of your produce, fish and meats. They can also give you tips on how to prepare the meat, fish or vegetables.

One of the great farmers at the Union Square Farmers Market is Norwich Meadows Farm which I am going to spotlight. They have organic seasonal vegetables and sometimes fruits. I don't know why, but their Middle Eastern cucumbers, tomatoes and watermelons from Norwich Meadows Farm are out of this world! They are juicy, flavorful and on top of that they smell so nice. They even have wonderful artichokes. Proof again that there is no other way to grow vegetables but ORGANIC! You should browse their website for more information on their products. I went last week, and this time I got cute mini vegetables and watermelon. We got a good deal because they gave a discount as their truck apparently had broken down, and they could not bring the vegetables back upstate. I hope they fixed their truck!

Quinoa with vegetables recipe

quinoa with vegetables

Great recipe for lunch or light dinner! (eating heavier in the middle of the day and lighter at night is better for your digestion anyway!)

Shopping list for 1 (buy organic and local when possible)

-Quinoa

-2 tomatoes

- 1cucumber

- handful of cashews

-  handful of dried apricots

- a bit of parsley

-salt/pepper

-extra virgin olive oil

Costs of my dish: Less than $6 per person.

How to make:

Rinse the quinoa with water. Boil for 15 minutes in a stockpot with water and a pinch of salt.  Take of fire, drain and cool of with cold water. drain again.

Wash and cut in pieces (organic) tomatoes, cucumbers and onions. Mix into the quinoa with a bit of olive oil, salt, pepper.

Top off with cut dried apricots, cashews and parsley and you are ready!

You can add any vegetable, seed or fruit you like. Avocado tastes great with it too!

If you start cooking the quinoa and in mean time prepare the other food, you really only need about 16 minutes to make this meal! Woohoo!

Salad making for dummies

What you need for a good salad

  • 1. Pick a kind of lettuce as a base, I prefer organic. Romaine, watercress or mix different lettuces up.
  • 2. Pick 1, 2 or more vegetables that you add raw or grilled. Like cucumber, tomatoes, grilled mushrooms, red peppers, onions.
  • 3. Add a protein. If you go vegetarian you can choose nuts. If you eat meat you can add grilled organic chicken, beef, bacon or other options. And fish: tuna, salmon, grilled shrimp or scallops as a few examples. Avocado is a nice topping as it is filling
  • 4. Add extra toppings like dried fruits to make the salad get a sweet flavor (raisins, cranberries, grapes, strawberries or other fruits)
  • Add cheese to make it more hearty (goat cheese, blue cheese, parmesan, gouda or other cheeses)
  • Add finishing toppings. Seeds, sprouts or anything else you can think of too add.
  • 5. And last: add your dressing! *Simple salt, pepper and olive oil tastes great with good ingredients in a salad.
  • If you want to go to an asian twist: add soy sauce based sauces to the dressing.
  • If you want to go light, add yoghurt in the dressing.
  • When you want to go sweet & spicy, add a bit of spicy red pepper flakes in dressing with honey

Ingredients which taste great together and in combination are great:

  •  Goat cheese, cranberries & pistachios
  •  Romaine, parmesan, croutons
  • Tomatoes, cucumbers, salt, pepper
  • Goat cheese, roasted pumpkin, sunflower seeds
  • Walnuts & blue cheese.
  • Avocado is always great to add to every salad. Tomatoes and cucumbers almost always are good ingredients too!

Just add some lettuce and olive oil!

Even though I prefer vegetarian & vegan food, once a while I still eat some kind of fish.

My motto:Eat what you dare to look at being killed. I don't judge people on what they eat or not eat, but I don't like people who eat meat but freak out when the meat on their plate looks like the came from an animal (duh!) or who can't look at the animal being slaughtered. If you want to eat something, dare to look at it being prepared for consumption! And my fish consumption is less and less anyway...

The other day I made one of my favorite simple recipes; Salmon from the oven. What you need is an organic piece of salmon (or any other kind of fish) and some vegetables, olive oil and fresh herbs. Within 3o minutes you have a delicious meal!

Serve with any rice you like. I stir fried onions and grasswort (Zeekraal in Dutch) but you can serve any other vegetables. other options are string beans or green peas. Enjoy!

Ovendish with fish and vegetables in a casserole for 4 persons

Ingredients
  • Organic salmon filet big enough to feed 4
  • 4roma tomatoes
  • 10 cherry tomatoes
  • 1zucchini
  • olive oil
  • salt
  • pepper

Instructions
  1. Take a casserole and cover the insides with olive oil.
  2. Put the salmon filet in the middle
  3. cover the salmon with salt and pepper.
  4. Slice the zucchini and cover the salmon
  5. wash the tomatoes and put in the casserole around the salmon
  6. add the cherry tomatoes too.
  7. sprinkle some more salt and pepper and olive oil over the whole dish
  8. Put in oven on medium to high heat

Notes
check the fish regularly to see if the insides of fish are cooked through.
