Healthy Food: Ask and you shall receive

I've had crazy weeks in my life... 4am starts, 12am wraps, you know - all those glam 'life of a model' moments. Nothing I hate more than eating stuff that makes me feel lethargic, heavy and clogged. Unfortunately when working long hours or late sometimes models have to choose between skipping a meal or eat fatty, processed, or chemically treated food! Certainly not the ideal for a gorgeous figure and face that needs using again tomorrow, the day after, and hopefully the day after that.

How I prepare for photo shoots

I usually pack an enormous fridge bag full of healthy food like dehydrated snacks, green juices, organic salad vege's and fresh fruits, bottles of my 'Supergorgeous Almond Mylk' and plenty of raw chocolate options for snacking, such as my raw cacao protein bars (from the book), goji berries and cacao beans, and a nice big slab of raw chocolate. It lasts a few days usually.. This time, unfortunately I ran out.

That one time I ran out of healthy snacks

I was driving 4 hours homeward bound, late at night with only a few hours sleep from the night before and soo tired. I was wishing I had some delicious SOMETHING to keep me awake and there was no organic coffee, or organic anything at the service stations... So I asked for something crazy! I wanted a Chia Latte but without the 'powder' they make it on which is full of sugar, flavorings and other evil things... but they couldn't get their head round that one, so I asked for a 'Earl Grey' (delicious tealeaves infused with Bergamot) Latte with a big pinch of cinnamon and a spoonful of honey and, made on non GM soy (lucky they had this!). It was the best of a bad bunch and ended up tasting delicious! I drank it with the last of  my healthy snacks, my dehydrated cacao cookies and felt very thankful.

Boost Juice on my way home

On another big drive home I was fortunate enough to have access to a Boost Juice bar (a juice bar chain all over Australia) where I custom ordered a beetroot, pineapple, lemon and ginger juice and asked them to create a frappe with it adding in frozen mango, and green tea powder and it was PERFECT!

I'm writing this post to encourage you to be bold! Go ahead, ask for crazy things to suit your needs! Even in places that you think won't have any healthy food that you could eat. The more we do this, the more people will realize the need to have healthier, raw, GF/ DF/ SF, organic, non-GM etc options available in places where now there is only fast food as an option.

Raw Chocolate Eco Block

We models need chocolate right? It can get us from one casting to another, one shoot to another while still keeping us feeling light & energetic ...

Actually raw cacao chocolate is a wonderful superfood for any one of us who wants to look & feel our very best, as well as have the energy to meet our superhuman lifestyles!

Today I'm going to give to you one of the 60+ recipes from MODEL CHOCOLATE - my supergorgeous raw chocolate recipe book, due out later this year.

This recipe is cheap, simple to make, & tastes delicious! It's raw energy food you can make in 10 minutes to have on hand all week (if it lasts that long!).

Creamed coconut

Creamed coconut is available from good health food stores or supermarkets, you can get it in a jar - such as the beautiful Artisana brand - which is more expensive, or in a blocks such as Royals which make this recipe super cheap! Find the blocks at Asian supermarkets or again, from the health food store.

Ingredients
  • 200g creamed coconut
  • 2 big tablespoons raw honey or more
  • 1 tablespoon cold pressed rice bran or coconut oil
  • 1 teaspoon vanilla powder
  • 1 big tablespoon nut butter, optional (makes a slightly softer creamier chocolate)
  • ½ cup chopped raw brazil nuts
  • ½ cup mixed sultanas, currants & raisins
  • Pinch fine sea salt
  • ⅓ cup organic raw cacao powder

Instructions
  1. Line a flat tray with foil or non stick baking paper.
  2. Place creamed coconut into a glass bowl to melt over a larger bowl of boiled water.
  3. Remove from heat & mix in all other ingredients until combined.
  4. Using a spatula scrape out onto lined tray or mould & set in the fridge.

Notes
Supertips: you can add different kinds of nuts, seeds or dried fruits to make it a very special raw chocolate eco block!

 

10 minutes to prepare. 10 minutes to set. Makes a massive block to feed a family.

Vanilla-Chiaseed Mylkshake

As a girl one of my favorite things was a cold vanilla milkshake. Usually made with lots of sugar, dairy milk, ice-cream. Definitely not a healthy way to get re-energized, in my opinion. Throughout summer I like to make each member of my family a juice daily, & a smoothie or 'mylkshake' (the truefood alkalizing energizing mylkshake you have when you are NOT having a milkshake!). Here's today's simple & delicious recipe!

Vanilla-Chiaseed Mylkshake
The truefood alkalising energizing mylkshake you have when your NOT having a milkshake!

Ingredients
  • 2 young green coconuts, water & pulp
  • 1-2 tablespoons soaked chiaseeds (at least 15 min but best overnight) + more to stir through later if desired
  • 1-2 tablespoons light agave, more if you want it really sweet
  • The scraped seeds from an organic vanilla pod OR natural vanilla extract
  • 10 icecubes (optional but really good!)

Instructions
  1. BLEND coconut water, pulp, chia, agave & vanilla together until very smooth & creamy, adding the ice last & blend again.
  2. If you love chia seeds as much as I do, stir through another spoonful of whole soaked chia seeds for texture. Divide into 2 tall glasses & enjoy!

Notes
A Bonus: Coconut water is PACKED with super-hydrating goodness (means - a facial, for your cells) PLUS it's naturally high in lauric acid which actually BURNS fat for me as I sit here sipping & typing ;)

p.s If you would like to make this recipe for Frosty Fruity when you're going to have an actual frosty Xmas day, you can always swap the frozen fruits for some stewed fruit or dried fruits and perhaps some spices such as cinnamon, cayenne and nutmeg to make a more warming kind of chocolate treat.

Frosty Fruity - Raw Chocolate
A delicious frosty & fruity chocolate treat!

Ingredients
  • 60g cacao butter
  • ¼ tsp vanilla powder
  • 1 tbs raw organic coconut oil
  • 2 tbs raw macadamia butter
  • 2 tbs raw dark agave
  • ⅓ cup raw cacao powder
  • 1 cup freshly frozen mango, diced
  • ½ cup frozen blueberries

Instructions
  1. Melt cacao butter with vanilla powder and coconut oil in a glass bowl over another bowl of boiled water.
  2. Remove from heat, whisk in macadamia butter, agave and cacao powder.
  3. Line a glass dish with greaseproof paper and squander frozen fruit into the base.
  4. Drizzle raw chocolate on top. Chill one minute in freezer. Serve.


Raw Mini Christmas Puddings

Hi everyone at OYL!!! Well here it is. Last minute post of the year for me! I was in the kitchen this afternoon making up a raw non-chocolate version of my 'Choka-fruit Puddin' (recipe in my book) and of course posted a pic to Instagram promising to share the recipe. So here it is. These tiny puddings are the most simple, delicious Xmas treats you'll ever make, and so good, that when people find out they're healthy as well, they will probably beg you for the recipe.

Ingredients
  • ¾ cup organic dried cranberries
  • ¾ cup organic pitted dried prunes, diced
  • ¾ cup mixed organic sultanas and currants
  • 1 Tablespoon organic goji berries
  • ½ cup dried Kiwi Fruit, optional – for colour, diced
  • 8 large pitted Medjool dates, chopped
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla powder
  • Zest of 1 organic orange
  • Fresh juice of 1 orange
  • 1 dessertspoon rum (for flavour only, optional!)
  • ½ cup hot water
  • 2 cups almond meal (OR to make nut free – you may use ground coconut instead)

Instructions
  1. Mix together all dried fruits, spices, freshly squeezed juice, hot water and rum if using.
  2. Place this mixture at room temperature for 12 – 24hours, 2 of those hours may have mixture placed into the sunlight or in a warmer place. To be honest I didn’t have time, so only sat the fruity mixture in the sun for 1 hour then continued on with the recipe.
  3. Add in the almond meal and mix well. Form mixture into mini puddings with your hands, and decorate with goji berries or anything you fancy. Sit them in little muffin-tin liners and chill until Xmas day!
  4. Serve at room temperature or slightly warmed, with freshly made raw coconut cream, raw banana or mango ice-cream (made by simply whizzing up frozen fruit in a food processor) ‘The Dreamcrème’ (again, in my book) your favourite vegan ice-cream, or yogurt such as Co-Yo.

TRENDS and TRENDSETTERS. Sometimes we love them or hate them, depending on our personal preferences in taste or style, but there's a new kid on the block and surprisingly, she's just as lovely on the inside as she looks on the outside, her name is real FOOD. No wonder everyone is falling in love.

I came across this caption this morning 'Food is the new Black'. Love it. It sums up my concept of modern food preparation nicely. So I shared it on my Instagram. As many of you know, over the last couple of years I've poured my heart and soul into creating a book called 'Model Chocolate'.

Often in the not-so-distant-past, gluten free, dairy free, sugar free, vegan or vegetarian food has been considered 'rabbit' or 'hippie food' by mainstream food lovers. I personally wanted to change that. When I came up with the idea of my 'superfood meets fashion' styled cookbook, my desire was that it would revolutionise the way people thought about 'healthy' foods, and to inspire them that alternative food preparation could be as interesting, delicious and even spunky as the food they were used to. Actually, healthful, nutritious and deliciously natural foods are much more than that! Real food, unprocessed, and prepared as close to nature as possible more than just satisfies. It helps to create the wonderful synergy within our bodies to inspire change on more than simply a physical level. It uplifts the way we think, the choices we make in other areas of our lives, and motivates inspiration to live richer lives than what we considered possible.

So let me encourage you to 'get your VOGUE on'! By that I mean go with the still-fairly-new trend of a healthier way of eating. Why not take the plunge and experience all that life has to offer you. It's becoming easier than ever to choose natural, organic, life-filled foods. Let's get behind a trend which will not only enrich our own lives, but make our world a truly better place, encouraging sustainable farming and produce which will in time become affordable for all. modelchocolatemodelchocVOGUE

Fruit suggestions ~
Mango, cut into chunks

OR any seasonal organic fruits of your choice - express yourself!

Fondue Dipping Chocolate

I love a plain raw chocolate recipe such as my Classic Dark (in the book) for dipping, or simply use any of your favourite raw chocolate recipes!

Prepare raw chocolate of your choice. While cacao or coconut butters are melting you can start chopping your favourite fresh fruits and making up a beautifully arranged platter. Place a couple of small forks on the side. Finish mixing up chocolate and serve in a small bowl at the centre of the fruit plate. No need to keep warm. Enjoy! The raw chocolate should thicken naturally as it stands depending on the weather. <3

super power smoothie

Hey!! How's everyone! :) I'm rushing out the door with one of my delicious smoothies in hand and a list from here (Australia) to NY, well maybe not quite that long, but there's a lot to do today! Here's a fresh and fruity a variation of my Model Chocolate Super power smoothie. You may have seen some of my smoothie breakfasts popping up on Instagram. Today I opted for the greens, berries, kiwi and banana with chia seeds and cacao nibs - they're on top so you can't see them in the picture! I also added some probiotic powder and extra water to the coconut water and pulp.

Ingredients
  • 1 green coconut, water & pulp(if you can't find a fresh one, use coconut water in a package)
  • 1 cup frozen strawberries, blueberries or any berries!
  • 1 tablespoon or less chia seeds
  • 1 tablespoon raw cacao nibs
  • Optional Extras:
  • 2 teaspoons acai, maqui powder or small handful goji berries
  • 2 brazil nuts + gel of 1 medium aloe stalk
  • 1 tablespoon rice protein, or hemp protein powder, will change the flavour
  • 1 teaspoon barley green, spirulina, or 1 handful of baby spinach leaves
  • 1 teaspoon maca, mesquite or lucuma powder
  • Frozen banana/mango chunks or raw honey, if you want it sweet
  • Pineapple or kiwi fruit, passionfruit
  • 2 teaspoons bee pollen + ½ teaspoon probiotic powder
  • Extra water if needed

Instructions
  1. Put in blender.
  2. Mix.
  3. Pour in a glass.
  4. Enjoy!

 

This smoothie is true power food. Just experiment to get it how you like it or need it on the day. Energizing, beautifying, superfoods! Addiction plus. Sometimes I want it creamy not fruity and I'll use my 100% raw Super gorgeous Almond Mylk (in my book) as the base and no tart fruits adding raw cacao powder as well! Mmmm!

Models are beautiful people yes, but they are also very intelligent and at times vulnerable, real people with real hearts which can be broken! I love life. I love making life a celebration daily. Get your HEMPY on!... Hemp Mylk

Today I'm excited to share with you my glorious new Hemp Mylk recipe which is not only SF DF GF, but also NUT FREE! Seriously super awesome! Just sipping on an organic Dande Latte (only with the milk below) & its amazzze. So here it is. Easy & yummy, superfood-y, super-frothy Hemp Mylk...

Recipe:

1/3 cup hulled hemp seeds
1 dessertspoon maple syrup
1/4 teaspoon vanilla powder
pinch cinnamon powder, optional

2 cups water

BLEND until it becomes white, super smooth, frothy & creamy Mylk. Strain through a nut milk bag if desired (I never do!), otherwise you may strain it when you're just about to use it through a fine gauze strainer.

Enjoy in smoothies, over breakfast, anywhere you'd use regular milk. To make this Mylk 'probiotic' add one capsule dairy free probiotic powder to the recipe before blending ;)

Strawberry-Nibbed Smoothie

HI LOVES! ITS BEEN AGES & I'M JUST A LITTLE HIGH ON CACAO LOVE RIGHT NOW WITH ALL THE FUN WE'VE HAD SHOOTING FOR MY BOOK (Model Chocolate) (BTS pic - it's all that cacao) ... TO SHARE THE LOVE HERE'S A SPUNKY LITTLE SMOOTHIE THAT'S SERIOUSLY DELICIOUS EASY & DEF NOT  SENSIBLE THAT YOU CAN USE >>> NOW. MMM (THIS SHOULD SOO BE IN MY BOOK!) MAKETH ONE SO CONTAGIOUSLY GLEEFUL! :D

 

Ingredients:

1 young green coconut, water & pulp

1 handful of raw cashews

1 heaped cup frozen strawberries

1/2 cup frozen blueberries

1 cup water

1 tablespoon cacao nibs (oooohhhllaalaa)

1 tablespoon chia seeds

In the blender - cream cashews & frozen strawberries with coconut water, add everything else, BLEND until smooth. SOO YUM. Only beware - you may get the happies while taking in this EXTREME beauty food. Makes two medium or one big smoothie.

Tip: this smoothie is excellent for people wanting to avoid excess sugars, a lovely treat if you're on an anti-candida diet. Low glycemic, hydrating goodness.

Raw Chocolate Brownies

RAW CHOCOLATE BROWNIES LOVE!!!... ♥♥♥

When you want to show someone some love, what better way to revolutionise yourself & the world you live in with these supereasy, superYUM organic brownies! RAW & so highly satisfying & nutritious you can even have them for breaky :D

TO MAKE:

1.5 cups organic raw walnuts

1.5 cups organic fresh medjool dates, pitted

3/4 cup raw cacao powder

1 teaspoon natural vanilla

Pinch himalayan pink salt or 3 squirts 'Cea' spray (as I did!)...

Pure raw cacao nibs for sprinkling!

Simply WHIZ your walnuts in a food-processor until fine (about 1 minute) add pitted dates, salt & vanilla, whizzz again until quite fine & starting to bind. Add cacao powder, one more whiz & you're done! You want it the mixture to be slightly dough-like but still crumbly. Press into a glass storage dish & refrigerate! That's it. If you'd like a chewier texture you can pop them into the freezer for a while before serving. Another nice touch would be to melt a little 'creamed coconut' & make white crosses on them especially for Easter, or even some desiccated coconut would do it.  

These delish raw brownies have the texture of a rich buttery brownie you'd expect to be highly unhealthful only... IT's SUPERFOOD! Love to hear how you go making this.
