Healthy lentil soup

Ingredients
  • 4 cups of (red) lentils
  • 3 Scallions , chopped
  • 3 medium carrots, chopped
  • 3 medium celery, chopped
  • Salt/pepper
  • 3 Bay leaves
  • 8 cups of water

Instructions
  1. Put everything in stockpot.
  2. Add water until everything is really under water. (If during cooking the soup dries up add more water).
  3. Put on stove on turn low heat and let it cook for an hour. The lentils became soft and spread all over the soup.
  4. Take out bay leaves.

Notes
You can add bouillon powder or bone broth for a more depth in flavor

 

 

 

 


Raw Carrot Soup

Today I have something very special to share with you: a delicious raw soup!

If you still not sure about raw blended soups, try this one! Its a creamy carrot soup with avocado! So delicious and healthy! And let me tell you, it took 5 minutes or less to make it. All you need is freshly squeezed carrot juice, 1 avocado and spices. No cooking involved, no messy dishes and pots to clean up after. Its perfect lunch recipe for busy people.

  • 2 cups fresh squeezed carrot juice
  • 1 avocado
  • sea salt
  • curry powder
  • turmeric powder

Instructions
  1. Place all ingredients in a high speed blender.
  2. Blend.
  3. Ready!

 

 

Carrots are exceptional sourse of Vitamin A,C, K  and potassium. Contains high level of beta-carotene  and dietiery fiber.

 

Turmeric is a root vegetable, which is famous for its anti-infalmmatory properties and high content of antioxidants. * If you are pregnant or breast feeding DON'T include turmeric in this recipe.

Avocado is a great sours of a healthy fat and the best food sours of Vitamin E.

OYL Leftover Minestrone Soup

You know I love leftovers! I always find a way to make something delicious with it. A Leftover minestrone soup is a great leftover dish using fresh and leftover ingredients. You can even use the (vegetarian) pasta sauce, and the pasta you made the night before! Also, any vegetables left in your kitchen, can usually be added to this soup. So clean up your fridge and make a lovely soup!

Ingredients
  • 1 fresh tomato
  • 4 tbsp tomato paste
  • 1 Zucchini chopped
  • 1 small onion chopped
  • 1 carrot chopped
  • 1 can of chickpeas, washed and drained
  • 2 cloves of garlic, minced
  • fresh parsley, chopped
  • 3 or 4 cups of water
  • 1.5 cup of your favorite pasta, cooked al dente
  • Olive Oil (for cooking)
  • 2 tbsp dried Italian herbs ( a herb mix, for instance with oregano, rosemary, basil, sage, marjoram, thyme)
  • 1 Bouillon cube ( or a cup of bouillon liquid, 1 tbsp of powder, or 1 tbsp of bouillon paste, adding extra for flavor is optional)
  • Salt
  • Pepper

Instructions
  1. Put a pan on the stove and lightly sauté the garlic in the olive oil
  2. Add the onions and zucchini until golden brown
  3. Add the water and bouillon, turn heat low.
  4. Add the carrot, tomato paste and chopped tomato
  5. Add the herbs and chickpeas
  6. Let simmer for 20 min, occassionally stirring.
  7. Taste and add salt and pepper to your liking.
  8. At the end, a few minutes before serving, add the pasta and parsley

Notes
Soup tastes the best when it has cooled and is reheated. To add extra flavor to this healthy soup, you can prepare it the night before (minus the pasta, you need to add that just before serving)

You can add leftover (vegetarian) pasta sauce to add flavor, or instead of bouillon. Add and taste until you like your soup!

If you use dried chickpeas, you need to wash and soak them overnight the night before, and add them in the soup a bit earlier, because they need to cook more.

Other leftover vegetables you may add are bell peppers, celery, (cooked) green beans, spinach(add at the end), mushrooms, (cooked) potatoes, green peas, and more!

 

 


Indian Pumpkin coconut soup

Soups are great for the cold days, or just when you are craving a nice nourishing soup!

I like to use coconut milk sometimes to make my soups a bit creamier instead of cream. And since pumpkins are big usually, I like to use half of the pumpkin in a nice oven dish, and the other half to make soup.

Ingredients
  • half a pumpkin, cut in pieces
  • half a can of coconut milk
  • 1 cups of water
  • salt
  • pepper
  • 1 tsp indian curry powder
  • ½ tsp fennel seeds
  • 2 tsp pine nuts
  • handful of (alfalfa) sprouts

Instructions
  1. Cook the pumpkin in enough water until soft.
  2. Turn heat off, rinse pumpkin with cold water.
  3. Take of skin of pumpkin and put back in pan with a cup of water.
  4. Add indian curry powder, fennel seeds and pepper
  5. Add coconut milk.
  6. Stir on medium heat.
  7. When cooking turn on low heat
  8. Use blender to blend soup
  9. For flavoring add salt.
  10. Taste the soup and add any (indian) herb or condiment to your liking.
  11. Serve in a bowl, add a bit of pine nuts & alfalfa to garnish (or anything else you like)

 


Melon Fruit Soup

When it is hot outside, or when you crave something sweet, or when you need to eat something light: a fruit soup is the answer! And it is so easy to make too! My Mother-in-Law Marlies makes this all the time, and she gave me the recipe.

It is a light texture, a bit thicker than regular soup. The flavor is more subtle. The real flavor bomb is the mango puree that slowly melts in the soup. Add some berries and mix it all together for a party in your mouth!

Ingredients
  • 2 small melons (can be any melon, we chose honeydew melon.)
  • different berries (strawberries, blueberries, blackberries)
  • 2 ripe mangoes

Instructions
  1. Wash all fruit really well.
  2. Cut the mango in pieces and put in blender. Put the smooth texture in the freezer for an hour until it becomes like ice-cream.
  3. Cut the melon and take out seeds. Blend this as well. This is your soup.
  4. Pour the water melon in a bowl.
  5. add berries
  6. Take out the mango sorbet and pour a scoop in the middle of the soup.

 


Organic and vegetarian Thanksgiving

The nicest thing about Thanksgiving is being with your family and/or friends, and eating good food! Food is the best when it is shared.

When I am in New York City during Thanksgiving, I usually make a big nThanksgiving dinner with the help of my friends. And all my friends without plans for Thanksgiving are always welcome to join. This always gives a nice and spontaneous group of friends that get to know each other over a nice dinner.

The preparation for Thanksgiving is to me the most fun. I buy nice plates and napkins and decoration for the table. I go to the farmers market to buy the veggies of the season.  I make fresh soup and hot spiced apple cider. I make a sweet pie and chocolates for dessert.

Most families will eat turkey this season, but there are many vegetarian options too for the main course.  Like this Hazelnut cranberry roast by Field Roast:

Celeriac Soup Recipe

Today I made Celeriac with Chestnut soup.

What do you need?

  • 1 celeriac
  • 2 celery
  • 2 handfuls of cooked chestnuts
  • 2 shallots
  • 2 vegetarian bouillon cubes
  • 1 litre of water.
  • salt & pepper
  • olive oil.
  • parsley

 

How to make:

* Cut of the skin of the celeriac with a knife. Chop it into small cubes.Clean Celeriac

* Chop the shallots

* Saute the celeriac and shallots.

* Chop the celery

* Put the cooked chestnuts in a pan au bain marie, and cook it for 5 minutes so the chestnuts are heated. take out of plastic wrapper. I used the brand: Allaire certified by AB ( Agriculture Biologique). You can also cook chestnuts yourself but I though this was easier ;)

Chestnuts really remind us of winter. They are delicious cooked and contain no cholesterol , no gluten and little fat, even less calories than  other nuts like almonds and walnuts. it is also the only nut that contains Vit C! (from wikipedia).

* Boil the water in a pan, with the 2 bouillon cubes. add the celeriac,the shallots and the celery. turn heat low when boiling.

* Add half of the chestnuts

*When celeriac is soft, you can take the pan of the heat, and use a mixer to puree the ingredients. ad a bit of olive oil, salt & pepper to your liking.

* Use the rest of the chestnuts to put on the bottom of the soup bowl, and poor the soup over it.

* Add parsley.

My favorite Fall Menu

Hello Everyone!

I'm so happy fall season is all over New York City, and it's time for some cozyness when it comes to homade food! We love to cook amazing food at home specially at this time of the year cause we can fell in the atmosphere that a nice meal it's been prepared - our home becomes warm and with a nice aroma in the air.

So as you could see on my previous posts, I LOVE colorfull tasting plates... this is also true when it comes to soups. When I was a little girl, i used to eat soup at home during not so rigorous brasilian winter - so I grew up enjoing it a lot. Now I've been trying to make and improve some different recipes, and each time it comes out tastier!

So I'm going to introduce you to my favorite fall dishes of all times:

This creamy hearty cauliflower and raw chedar cheese is one of my favs!

 

All homade veggie burger- the STAR is the whole wheat bun

 

The inspiration for this plate came from a visit at "Le Pain Cotidien" - half sandwich, italian prosciuto crudo, shaved parmegiano cheese and arugula salad with a poached egg on top!

Coriander Spinach and Zucchini soup recipe

Hello all: Fall is here! So time for nurturing, warming soups.

The recipe is below.

Just note I add ricotta for some smoothing texture and taste, but you don't have to. I like to add it instead of cream, it tastes great and not so bad for you. Don't we all like that? :)

 

Ingredients for cilantro soup

This soup is very fast and easy to make!

Ingredients
  • water
  • 2 (vegetarian) bouillon cubes
  • salt & pepper
  • 1 chopped zucchini
  • 1 chopped onion
  • handful of cilantro/coriander
  • 2 handful of rinsed spinach
  • ricotta

Instructions
  1. Heat the water with the bouillon cubes and the salt and pepper in a stock pot.
  2. Add the chopped zucchini.
  3. In a separate pan fry the chopped onion until golden.
  4. Add the onion to the soup
  5. Turn soup low when boiling and add the onion.
  6. Add the cilantro/coriander.
  7. Blend the soup until smooth.
  8. put a handful of spinach into a bowl and pour the soup over it.
  9. Add pepper/salt to liking.
  10. Add a spoonful of ricotta in middle of soup.
  11. Soup is ready to serve!

Notes
You need a blender.

Tomato-Zucchini-Chickpea soup

Ingredients
  • 2 cans of peeled tomatoes or chopped tomatoes.
  • half a can of chickpeas
  • chopped zucchini
  • 2 bouillon cubes
  • 4 cups of water
  • salt & pepper
  • red pepper flakes (not necessary but makes the soup a bit spicier)
  • dried parsley spoon
  • spoon of olive oil

Instructions
  1. Sautee the zucchini in a stockpot, add tomatoes, water, bouillon cubes
  2. Turn low when it starts to cook
  3. Add the chickpeas, red pepper flakes, salt & pepper
  4. At end add olive oil and parsley.

So when I had to shoot in Amsterdam last week, I went to pick up food there.

They have a few locations,  but the one I go to located on the Looiersgracht12, Amsterdam.

My 1 day food diary

May 22nd 2012: I decided I want to get in my best shape for my vacation. I will be going to Ibiza beginning of June! I want to get in best shape possible for my bikini those days of course. So I decided to keep a food diary. Food and work out is a big part of looking great! So I am going to go for as close to 100% eating perfect, and working out every day. Plus I will get some great treatments, to improve my appearance.

Not bad, I did this job in Corsica a few weeks ago, but I am noticing I am not as toned as usual. And a bit pale :s. I have been working too hard on organiceyourlife.com I have not worked out as much! Bad girl...  I want to get back to my Sports Illustrated shape as below!(with the tan preferably ;) ):

That means I have to be tough on myself! No chocolate all the time, eating healthily and also moving my *ss more! You have to work for result... So, I am telling you exactly what I am doing coming weeks. What do I do to get in Top Shape again? I will show you my improvements, and you will also get to see what I eat, and how I change in shape and how my skin will improve! Trust me it will happen, just from one day, you already start having hydrated skin if you drink a lot of water...  We can all look great then coming sunny days!

DAY 1: To start off, I am making it very difficult for myself, as today right away I am taking a flight to across the Atlantic Ocean! But I took the time to wake up (if I get up fast I am tired all day, so I wake up early and take some extra time to just relax in bed before I get up) . I saw all the support tweets and messages and got excited! I started the day with a shot of Chlorophyll on an empty stomach. In the USA it is easy to get, it is the same as in a wheat grass shot, try to find it in your local health store. Chlorophyll is critical in photosynthesis in plants (absorption of energy from light). Then I looked what I still had in my fridge... And made a smoothie! Smoothie: Banana, coconut water, fresh lemon juice, flax seeds.

Workout: 25 min treadmill. I hate doing things for prolonged periods of time. but running while watching something on the iPad is good, and I put my favorite dance music on when I jump on trampoline. I DON'T like work out but I know that every time I start I get in greater shape and feel great after, like I can conquer the world. And feeling sweaty feels good too (release of toxins from your body) It makes your skin soft and nice too! At noon I went to get a nice facial at Tracie Martyn. Getting facials makes your skin glow! Deep cleansing and microdermabrasion. Find a good place close to where you live.

For lunch: I was cleaning out my fridge as I am leaving today. So I made soup!

  • water
  • salt
  • pepper
  • soy sauce
  • sesame oil
  • chopped fresh parsley (lots of it)
  • chopped fresh cilantro
  • chopped tomatoes
  • chopped onions
  • rosemary
  • oregano

Instructions
  1. saute onions in a pan
  2. other stock put add water, salt, pepper, soy sauce, chopped tomatoes, parsley, oregano, rosemary, onions, sesame oil.
  3. After 30 min, when soup is done, serve and let cool off
  4. add cilantro for flavor and as garnish.
  5. enjoy!

I made a salad to go to the airport, which I ate: romaine lettuce, walnuts, cucumber, yellow peppers, a few pieces of old Gouda cheese, grapes, olive oil, salt, pepper, cilantro, parsley:

During the day if I felt hungry I snacked on some cherries, grapes and nuts. I took a flight from NYC to Amsterdam with KLM. Before that I took a 30 min back massage at Express Spa. You know the one where you sit in a chair and they put their elbows in your back. I love it! So I fell asleep easily on the flight and got a few hours of sleep on the way over. Day 2: I landed in Amsterdam at noon. I went to the hotel. When you are running around you sometimes forget to eat, therefore it is always good to have some sort of snacks with you, that you can eat while on the go.  I went for lunch: a nicoise salad with grilled tuna. Then I walked around the "Vondelpark" with my nephew Navy and his father (my brother-in-law Michael Lamey) for a few hours. We were so tired when we got home as it was so sunny and warm too! I also had to carry Navy, on my back or in my arms, so that was a great work out. For dinner I had a couscous salad with grilled shrimp. And a decaf latte (sorry I could not help it it helps my digestion after a flight) I was so busy all day doing fun things that I forgot food. i just made sure that when I ate, it was delicious! Tomorrow I am going vegetarian I think. I hope they have some good options at the shoot... Day 3: Sorry I did not update this day earlier, but I was shooting today for a campaign with Dutch top models Cato van Ee & Sophie Vlaming.
