Actually raw cacao chocolate is a wonderful superfood for any one of us who wants to look & feel our very best, as well as have the energy to meet our superhuman lifestyles!

Today I'm going to give to you one of the 60+ recipes from MODEL CHOCOLATE - my supergorgeous raw chocolate recipe book, due out later this year.

This recipe is cheap, simple to make, & tastes delicious! It's raw energy food you can make in 10 minutes to have on hand all week (if it lasts that long!).

Creamed coconut

Creamed coconut is available from good health food stores or supermarkets, you can get it in a jar - such as the beautiful Artisana brand - which is more expensive, or in a blocks such as Royals which make this recipe super cheap! Find the blocks at Asian supermarkets or again, from the health food store.

Ingredients
  • 200g creamed coconut
  • 2 big tablespoons raw honey or more
  • 1 tablespoon cold pressed rice bran or coconut oil
  • 1 teaspoon vanilla powder
  • 1 big tablespoon nut butter, optional (makes a slightly softer creamier chocolate)
  • ½ cup chopped raw brazil nuts
  • ½ cup mixed sultanas, currants & raisins
  • Pinch fine sea salt
  • ⅓ cup organic raw cacao powder

Instructions
  1. Line a flat tray with foil or non stick baking paper.
  2. Place creamed coconut into a glass bowl to melt over a larger bowl of boiled water.
  3. Remove from heat & mix in all other ingredients until combined.
  4. Using a spatula scrape out onto lined tray or mould & set in the fridge.

Notes
Supertips: you can add different kinds of nuts, seeds or dried fruits to make it a very special raw chocolate eco block!

 

10 minutes to prepare. 10 minutes to set. Makes a massive block to feed a family.

Healthy snacks on the GO!

I've been asked a lot what I do to avoid unhealthy eating habits , so this article is dedicated to that. Some basic actions can really save your day!

Everywhere I go, I try to look for new places where I can find exciting organic food options. Also I go for greener options as much as I can, re using plastic and paper bags or water bottles for example - and always manage my diet to be the best as possible in the most different situations.

Airplane Food

I don't like how plane food tastes and how it makes you feel bloated - so I've found a solution for it: always pack a few healthy snacks and a nice home made meal to eat on the plane...

I spend so much time in airports and airplanes that if I don't take proper care, I will end up eating something not good for me. The first time I made my own bowl with plenty of healthy food I felt much more vitality and energy to handle those never ending 10 hours seated on a plane. Everyone should try it! No shame! Even the plane staff helped me out heating the meal, and there it goes a tip if you wanna do the same: take an aluminum bowl to make it easier, then ask someone to heat for you just the way they do it with regular food they serve it.

Snacks at work

Sometimes at work, snacks before or after lunch time, are not nutritious enough to help me get going through my day of hard work. So again I've found a solution. I ALWAYS take with me energy protein bars, nuts and other organic healthy snacks in little bowls that fit in my bag. I will never go to work unprepared, because we never know what's for breakfast and lunch. I'm known by stylists and beauty artists for doing it ( they usually sees me sneaking in my purse ), they call me "smart girl" and I have the pleasure to share my treats with them.

These are a few simple things you could integrate in to your routine, or if you don't have a routine (in my case).  You just need to think ahead of all difficult situations you're gonna be dealing with, so you are prepared for everything!

Follow these tips on a daily basis:

  • Try not to stay more than 3 hours without eating, ALWAYS have some good snacks with you, otherwise will won't even notice that it's been hours since you bite something.
  • Drink water! sometimes your body will trick you, so you might think you're hungry and would end up cheating with bad snacks, when your body it's JUST thirsty !
  • If you don't exercise that much ( or as much as you'd like to ); always goes for smart choices: stairs instead of elevators, go walking or biking to work  - do not ever lose a chance of moving your body!

Freeze-dried snacks

There is a new phenomenon in the food world: freeze- dried snacks. Another way to snack healthy!

Freeze-dried snacks are food that have been frozen, and then by drying have been depleted from all their water content. You can do this basically with all fruits & vegetables. One bag can be  only 1.2 oz, but has been made with 12 oz of fresh fruit... or even more!

For the Winter days I found this Organic Pumpkins & Cinnamon by Nature's All Foods. Pretty tasty I must say! Organic, non-GMO, raw & vegan. But with all the nutrients still in there, just totally dried. They also have green apples, blueberries, mixed tripical fruit to name a few of their other snacks.

CHOCOLATE BUCKWHEATIES

I cook in varying degrees, if you like, of healthiness!...Depending on whom I'm cooking for. This is a recipe I enjoy for myself, although my family who are not as raw conscious as I am, much prefer chocolate pancakes...

I know Organice Your Life readers are quite raw food minded, & I'm sure you'll enjoy this crunchy chocolaty breakfast treat.

 

CHOCOLATE BUCKWHEATIES

3 cups raw buckwheat, soaked
½ cup desiccated coconut
½ cup coconut sugar
2 teaspoons vanilla powder
2 tablespoons rice bran or coconut oil
2 tablespoons raw agave or maple syrup
¾ cup organic cocoa

To soak buckwheat: rinse raw buckwheat in a large sprouting jar with guaze lid 3 times filling with water & draining off. Fill jar with fresh water & soak buckwheat for 3 hours. Strain & rinse turning jar upside down to drain. Leave 12 hours, rinse again, drain. The buckwheat is ready to use.

Mix everything together in a large bowl. Spread out buckwheaties on dehydrator sheets or on trays to dry in the oven at 40’C for 6 - 8 hours. When cereal is completely dry & store in a nice jar ready to eat with Supergorgeous Almond Milk (page ) or layered with natural yogurt & fresh berries, or even to snack as is! Yum! :)

½ hour preparation time in total. Up to 8 hours drying time. Makes about 5 cups.

 


Yogurt mid-day tasty snack

I made this yogurt snack as a treat today. It was so delicious that I just HAD  to share it with everybody!

The yogurt I use is  from this local New York Farm calls “ Maple Hill Creamery”. They only use organic milk to make their products and the most important, milk comes from a 100% grass-fed cow!  This company totally wins my heart!

Here how I made it:

  • 1 “Maple Hill Creamery” yogurt with Maple flavor
  • 1 teaspoon of chia seeds
  • Sprinkle with raw cacao nibs
  • Add fresh organic mango
