If you change from eating meat to a vegetarian diet, it is a big change. But it is worth it. But what happens is that you usually crave some kinds of meat still. I changed about 8 years ago to an 90% vegetarian diet, with a bit of good fish once a while. But I still missed eating a good hamburger (not the ones from fast-food restaurants FYI) once a while . I am still not sure if it was because of the meat, or the bun and all the toppings that accompany a good burger.... Besides that, the texture of chicken meat I did like too so I craved that too.

We all know the truth about that most people eat TOO MUCH MEAT and that that's not good for our health. We just don't need that much protein. Also, the way we produce meat is so devastating for our environment, and the abuse of the animals is so common and awful, that The Earth needs a change if we want our kids to live on a livable planet with clean water, air and biodiversity. Even if you don't eat meat for just 1 day a week, you can drastically reduce your carbon footprint. The amount of energy it takes to produce one piece of meat on your plate is mind-blowing. And the carbon footprint of a meat eating person is many, many times higher than that of a vegetarian person. So if you want to help make a difference (remember every little effort counts if you add them all up!) you can do that by switching your meat dishes and using meat replacement products if you crave the flavor and texture of the meat.

Because there is a solution for these cravings! Until now vegetarian substitutes for meat where not that great to put it middy, and therefore some vegetarians were a bit sad. But thankfully some people took matters in their own hands and started to find new, all plant based, meat substitutes!

There is a vegetarian butcher in The Hague, the Netherlands. (yes that is a VEGETARIAN butcher, meaning: without animals being hurt, but with all the good taste) "De Vegetarische Slager". I already wrote about them once before and you can read that story HERE. They are in fact the first of their kind in the World. Mark Bittman, the renowned food critic from the NY Times even came to visit the shop once, and loved what he discovered.

So Animal cruelty free, vegetarian friendly, that sounds good to me! I love their products and they sell their prepackaged products already in 200+ stores all across the Netherlands, in health food stores but even mainstream supermarkets are joining in. (You can also order online.)

I spoke to Paul Bom, who is one of the geniuses behind the products, and who is present at their concept store in The Hague at the Spui 167A almost everyday. (across from the City Hall of the Hague). I asked him if their products include soy and if yes, if they are GMO free. He said thesoy used is organic and also gmo free! One other thing they use a lot is a plant called "Lupin" for their meat-like products.

The taste and texture of their products is really good. The chicken pieces are great to fool people thinking they eat real chicken. They also have a range of shawarma (shoarma in Dutch) made of lupin, minced meat, meat balls, and even have a selection of non-fish products. Also the fish products are great to fool someone. I LOVE the non-tuna spread "Tonyn". The mackarel one tastes like mackarel but is a bit too strong for me.

In the store you can buy all these meat products, as well as ready-to-go meals (love the typical dutch dish "Hutspot", a mix of mashed potatoes, onions & carrots accompanied by a meatball in a sauce). You can also buy super foods, olive oils, wines and juices. All of course organic.

The recently introduced their new "mc2burger", which is the name of their hamburger, to the people of France, at an exhibition in Paris. (The name is derived from E=MC2 from Einstein). I think the taste is really good as I got a sneak peak from their burger when I visited The Hague for work.

Besides that I am obsessed with their bread roll made of lupin, with their fake chicken in satay sauce! It is a bit naughty, meaning not that great for the thighs, but very delicious. Hey, models eat bad food too once a while ;-) See picture on top!

Also, today marks the opening of the first ever all vegetarian snackbar, also in the Hague. The MC2burger is available under the name "Vegabom" as well as other "Vegetarische Slager" products.  News item about the opening(In Dutch.)

I love me some figs!

Besides that they are tasty, they are also very good to help with digestion (dried or fresh) as they are a good source of fiber and full of vitamins and minerals & anti-oxidants. Read more about figs HERE.

Ingredients
  • small fresh figs, (4 per person) washed
  • 1 tbsp local honey
  • organic goat cheese, crumbled.

Instructions
  1. Slice the figs in half
  2. Put on plate that can go into the stove
  3. Sprinkle the crumbled goat cheese over the figs
  4. Pour the tablespoon of honey over all the figs
  5. Put in stove and roast until goat cheese turns brown and figs become soft.
  6. Serve warm.

The Green Smoothie

I want to share another great recipe.  It's super easy to make and very beneficial for your health; I have to tell.  The ingredients you'll need for this recipe Im sure you have in your fridge right now, but you'd never think to combine them all together.  So, let' see:

  • 1 or 2 bananas
  • 1 Gala apple
  • 2 cups of spinach
  • 2 cups of fresh water

Put everything in blender and run for 30 sec, or until everything blends very well.  That's it!  The Green Smoothie is ready.

It's so yummy, you wouldn't believe it!  Don't worry about the spinach; you will not taste it at all.  All you taste are bananas and apple!  The spinach adds so many vitamins and minerals to this drink!

You can have it for breakfast or dinner or as a snack in between the meals.

If you like this recipe, later you can experiment with different greens: kale, arugula, mint, romaine, etc.  As with fruits, you can use blueberries, pears, melons, or mangos.

This smoothie contains so many nutrients your body craves that by drinking it, you will loose your cravings for unhealthy food.

CACAO VANILLA HALVA

SOOO CRAZY BUSY working on all the planning for fashion/beauty/chocolate shoots for my up & coming book MODEL CHOCOLATE & I can't share the real ripper recipes, but here's a little idea for you to get more cacao into your day as well as more calcium.

SESAME halva has long been hailed a beauty food in many European wellness clinics & for good reason! Lots of good fats, vitamins & minerals & so delicious & easy to make.

In my book I like to make it a little less traditional by topping it all up with the extra antioxidants & chocolatey goodness of raw cacao.

To make halva, simply whiz raw sesame seeds in a coffee grinder or blender, placing into a bowl, add a little pure vanilla & raw honey to bind it into a sticky mass, not too much or it will be too sweet. Then simply halve the mixture & add raw cacao powder & a little maple syrup to one part. Layer the vanilla into a sealable glass dish & top it with the raw chocolate halva. DONE! An easy snack you can share with a friend & a pot of tea, or a satisfying raw dessert after a yummy green salad. I love it & it works wonders on my skin!

Yogurt mid-day tasty snack

I made this yogurt snack as a treat today. It was so delicious that I just HAD  to share it with everybody!

The yogurt I use is  from this local New York Farm calls “ Maple Hill Creamery”. They only use organic milk to make their products and the most important, milk comes from a 100% grass-fed cow!  This company totally wins my heart!

Here how I made it:

  • 1 “Maple Hill Creamery” yogurt with Maple flavor
  • 1 teaspoon of chia seeds
  • Sprinkle with raw cacao nibs
  • Add fresh organic mango

Hi all!

I decided I want to get in my best shape for my vacation. I will be going to Ibiza beginning of June! I want to get in best shape possible for my bikini those days of course. So I decided to keep a (food) diary. Food and work out is a big part of looking great! So I am going to go for as close to 100% eating perfect, and working out every day. Plus I will get some great treatments, to improve my appearance.

Not bad, I did this job in Corsica a few weeks ago, but I am noticing I am not as toned as usual. And a bit pale :s. I have been working too hard on organiceyourlife.com I have not worked out as much! Bad girl...  I want to get back to my Sports Illustrated shape as below!(with the tan preferably ;) ):

That means I have to be tough on myself! No chocolate all the time, eating healthily and also moving my *ss more! You have to work for result... So, I am telling you exactly what I am doing coming weeks. What do I do to get in Top Shape again? I will show you my improvements, and you will also get to see what I eat, and how I change in shape and how my skin will improve!  DAY 1: To start off, I am making it very difficult for myself, as today right away I am taking a flight to across the Atlantic Ocean! But I took the time to wake up (if I get up fast I am tired all day, so I wake up early and take some extra time to just relax in bed before I get up) . I saw all the support tweets and messages and got excited! I started the day with a shot of Chlorophyll on an empty stomach. In the USA it is easy to get, it is the same as in a wheat grass shot, try to find it in your local health store. Chlorophyll is critical in photosynthesis in plants (absorption of energy from light). Then I looked what I still had in my fridge... And made a smoothie! Smoothie: Banana, coconut water, fresh lemon juice, flax seeds.

Workout: 25 min treadmill. I hate doing things for prolonged periods of time. but running while watching something on the iPad is good, and I put my favorite dance music on when I jump on trampoline. I DON'T like work out but I know that every time I start I get in greater shape and feel great after, like I can conquer the world. And feeling sweaty feels good too (release of toxins from your body) It makes your skin soft and nice too! At noon I went to get a nice facial at Tracie Martyn. Getting facials makes your skin glow! Deep cleansing and microdermabrasion. Find a good place close to where you live.

For lunch: I was cleaning out my fridge as I am leaving today. So I made soup!

Vegetable Soup 1

Ingredients
  • water
  • salt
  • pepper
  • soy sauce
  • sesame oil
  • chopped fresh parsley (lots of it)
  • chopped fresh cilantro
  • chopped tomatoes
  • chopped onions
  • rosemary
  • oregano

Instructions
  1. saute onions in a pan
  2. other stock put add water, salt, pepper, soy sauce, chopped tomatoes, parsley, oregano, rosemary, onions, sesame oil.
  3. After 30 min, when soup is done, serve and let cool off
  4. add cilantro for flavor and as garnish.
  5. enjoy!

I made a salad to go to the airport, which I ate: romaine lettuce, walnuts, cucumber, yellow peppers, a few pieces of old Gouda cheese, grapes, olive oil, salt, pepper, cilantro, parsley:

During the day if I felt hungry I snacked on some cherries, grapes and nuts. I took a flight from NYC to Amsterdam with KLM. Before that I took a 30 min back massage at Express Spa. You know the one where you sit in a chair and they put their elbows in your back. I love it! So I fell asleep easily on the flight and got a few hours of sleep on the way over. Day 2: I landed in Amsterdam at noon. I went to the hotel. When you are running around you sometimes forget to eat, therefore it is always good to have some sort of snacks with you, that you can eat while on the go.  I went for lunch: a nicoise salad with grilled tuna. Then I walked around the "Vondelpark" with my nephew Navy and his father (my brother-in-law Michael Lamey) for a few hours. We were so tired when we got home as it was so sunny and warm too! I also had to carry Navy, on my back or in my arms, so that was a great work out. For dinner I had a couscous salad with grilled shrimp. And a decaf latte (sorry I could not help it it helps my digestion after a flight) I was so busy all day doing fun things that I forgot food. i just made sure that when I ate, it was delicious! Tomorrow I am going vegetarian I think. I hope they have some good options at the shoot... Day 3: Sorry I did not update this day earlier, but I was shooting today for a campaign with Dutch top models Cato van Ee & Sophie Vlaming.

Activated Pepita Snack

SNACK TIME :) Pepitas = Pumpkin Seeds = Vitamin E (skin +) & Niacin (read - amazing amazing for your brain = mood food!) & sooo much more. Google the happy little dears.

Many of you will already be up on the know of how damaging heated oils are to your health. Roasted nuts & seeds are so tasty & morish but also high in heated oils even when they're dry roasted. Here's a simple snack you can make which will satisfy your body's true need ~ FOR NUTRIENTS. Perfect along with a few carrot sticks in the handbag, they are high in protein too! This is how I prefer to eat my pumpkin seeds. My family do like theirs roasted & I make a three seed mix for them (roasted!) I prefer the recipe 'activated' which means they've become a living food & ready to GROW! Activated foods are much easier to digest, more alkalising to the body & even richer in vitamins & minerals :)

Recipe:
Organic soaked pepitas, drained
Tamari
Celtic salt (opt)
Cayenne pepper (I like lots!)

Add seasonings to *soaked drained pepitas, to taste. Dehydrate overnight in a dehydrator or very slow oven (say 40'C). Store in a jar ready for snacking or packing! MMM! I also love these sprinkled over salads, steamed garlic broccoli with my seed cheese for a quick, light, nutritious meal.

*To soak any amount, double the measure of pepitas with water & leave 3 hours at room temperature

When I get hungry, and need to eat something healthy fast, I make Avocado on bread, on Crackers or on a slice of toasted multigrain bread. It's so easy and tasty!

Cafe Gitane

I got this idea a little bit from one of my favorite restaurants in NYC: Cafe Gitane. There they serve a slice of Multigrain bread, with a layer of mashed avocado, a bit of olive oil, and red pepper flakes.

Cafe Gitane is not expensive, and the food is fresh & tasty, plus the ambiance is great. They have multiple locations (even around the World) They are a staple for fun-loving foodies and many celebrities go there to eat a nice lunch or dinner too. If you are in that area, give it a try.

Or make avocado on bread at home!

  2. With a fork you take out the avocado meat.
  3. Mash it onto the slice of bread.
  4. Add a bit of salt and pepper, and a few red pepper flakes.
  5. Enjoy!

 

Why avocado

Avocado has a lot of healthy fats for your body. So a few times a week eating it, will benefit you in my opinion. It also gives you a satisfied feeling, and stills your hunger.

Why Greek Yogurt?

Why Greek Yogurt?

Probiotics!! Greek yogurt is packed with the live microorganisms. According to the Council for Agricultural Science and Technology, probiotics have many health benefits. Studies show that the live cultures help to alleviate many intestinal maladies, inflammatory bowel disease, ulcers, while enhancing immune function and reducing the risk for colon and bladder cancer. The New England Journal of Medicine also published findings that eating greek yogurt on a regular basis can help you keep off the weight as you get older. A great diet food-it satiates your taste buds while filling your stomach on less calories.

In addition to being good for your waistline, it's a great source of calcium and protein (especially for vegetarians, which I know comprise a lot of our OYL readership). A 6 oz serving is equivalent to 2-3 ounces of meat as a source of protein.  With brands like Fage and Chobani readily available in almost every grocery store, there's no excuse not to try. These brands are prized for their rich and creamy taste- 0% fat content and no sour taste.  The sales speak for themselves. In a Fox News article published last week, it was reported that the Chobani brand alone produces 1.5 million cases per week. Trader Joe's greek yogurt is also a wonderful economic alternative that stands up in taste to the more expensive brands.

And good news for those of you who are lactose-intolerant, the thick consistency resulting from straining,  removes much of the lactose and makes it easier to digest. Furthermore, straining doubles the protein and cuts the sugar content by half.

So when  you're are craving apple pie and ice cream, try this quick and easy-to-make healthier option: baked apples with a scoop of greek yogurt.

RECIPE

Preheat oven to 330 degrees

Slice 3 apples: 1 honeycrip, 1 gala and 1 granny smith

Coat with a teaspoon of grape seed oil or butter

Sprinkle apples with cinnamon to your liking

Bake for ~30 minutes (40-45 minutes, if you like your apples gooier)

Add dollop of greek yogurt- I prefer Fage Total 0% or Chobani

For added crunch, try adding some toasted sunflower/pumpkin seeds/sliced almonds or granola on top.
