How we make the best organic coffee at home

This Organice Your Life clip shows you how Lonneke and her husband Dirk make the best organic coffee at home! This time it was a Latte macchiato, made with their favorite organic coffee by Antica Tostatura Triestina, an Italian coffee company of their friend Alessandro Hausbrandt. Antica has many kinds and flavors of coffee. Dirk likes the regular beans, and Lonneke likes the decaf beans.

Why we prefer organic coffee? Because this way the beans are produced and grown without harmful chemicals and pesticides. Also, especially for decaf coffee it is important to know how the caffeine is extracted from the beans, as many companies do it with lots of bad chemicals.

For your homemade coffee, all you need next to the delicious organic ground coffee is a little stovetop espresso maker, a milk frother and organic milk. if you have whole beans you also need a grinder.

Just an FYI when you watch the clip: the milk that gets frothed is heated in a skillet until warm.

OYL vegan black bean chocolate brownies

I love chocolate! And what is better than a brownie? Organic & vegan black bean chocolate brownies! Here is our version of this delicious organic treat, that is not too bad for you considering a large part of the brownie is made with black beans! I LOVE this brownie! And Dirk Verest makes this one for me all the time.. lucky me ;)

OYL vegan black bean chocolate brownies
A healthier version of a chocolate brownie made with black beans!

Ingredients
  • 240gr of drained canned black beans (keep in mind there is water added in cans, you need to take the weight without the water, a can of 400 grams is usually 240 grams of black beans)
  • 2 tbsp broken flaxseeds
  • 4 tbsp of water
  • 10 gr cocoa powder
  • 40 gr quick oats
  • ⅙ tsp salt
  • 40 gr maple syrup
  • 35 gr agave syrup
  • 20 gr coconut oil/cream
  • 20 gr cacao butter
  • 1½ tsp vanilla extract
  • ½ tsp baking powder
  • 130 gr chocolate chips

Instructions
  1. Preheat oven 180C/350F
  2. Mix the flaxseeds first with the water and stir until the flax seeds have absorbed the water and the consistency is more solid.
  3. Add all the other products except the chocolate chips together and mix everything together in a blender to make a smooth texture.
  4. Mix in the chocolate chips. (if the chips are too big you can cut it with a knife before mixing it in)
  5. Pour in a greased baking dish of 20cm by 20cm (8 x 8 inch) and smooth out.
  6. Put in oven and bake for about 15-18 minutes.
  7. Enjoy!

Notes
You can add freeze dried organic coffee or cinnamon for a different flavor!

Just Married!

On the birthday of my late father Rob Engel, 29th of January, Dirk Verest and I, Lonneke Engel, would like to announce our marriage to the World! I am a lucky woman and have never felt more excited for our future together! 

Just married!

Dirk and I are extremely happy with our intimate & spiritual wedding, in our beautiful loft in New York City, in November 2013. Surrounded by close friends, we were married by Brooke, an ordained minister, who is a close friend, and my best friend Johan's wife.

Married life feels good! You have someone in your life you love, who loves you back. You have someone in your life to lean on, and together you are a team. Dirk and I are a team. For better and for worse, for real. And that's something I have longed for, for years.

Bare Burger NYC review

In NYC we can find a lot of restaurants. A lot of fast-food restaurants, as well as high-end cuisine. Any kind of cuisine you can find here as well. And organic versions of these fast food & high end restaurants are here too. I really like Bare Burger NYC.

Bare Burger NYC started with I believe just one place downtown NYC close to the NYU area, and quickly expanded, maybe also because of their franchise system. Loved by students and locals who appreciate good, simple comfort food with a low price tag, this place becomes such a success fast that new Bare Burger NYC restaurants are opening all over town. There are over 15 restaurants also outside of NYC.

We go quite a lot as it is easy and very close to where we live. And the choices of salads and burgers give you plenty of different choices to choose from each time! Their menu includes big healthy salads, healthier versions of burgers with organic ingredients, organic fries, organic milkshakes & beer: Check their MENU.

I have been going here from the beginning. Their restaurant has a nice vibe and the terrace as well. Bare Burger NYC now has made 50% of the menu all vegan and even offer gluten-free options!

Love a burger? Bare Burger has a great system for you to choose your ideal burger! Pick your bun, patty, toppings, sauces and sides. Ever heard of an elk or bison burger? or a black bean burger? They got them here! And all organic of course.

Love fries? I love the sweet potato fries! And they fry them in peanut oil (they say it is healthier) And they come with 4 Bare Burger original dips.. still deciding which one is my favorite....

Love a milkshake? They got a milkshake made for you from scratch! Fresh ice cream, organic fruits, a bit of organic cane sugar and shake it baby!

Oh, and if you really want to eat healthy: they have a few nice salads and you can add just a patty without the bun to it. Problem solved.

Making of Model Chocolate

Carolina, Fabio, Dirk and I recently spent some time in my Organice Your Life® kitchen in NYC making delicious chocolate treats! We first went through the Model Chocolate book by top model & OYL contributor Abigail O'Neill, and picked our 2 favorite recipes.

Australian model Abigail just released her first chocolate & super foods book full of yummy desserts & treats called "Model Chocolate". And send us a copy too to try some desserts! So we spent the whole night preparing the recipes and we had a lot of fun!

From the many, many recipes, I chose the pie Love Me Bittersweet Jaffa Pie and Carolina chose the cookies.

The pie is a mix of pure, organic ingredients like shredded coconut, pure chocolate nibs & powder, orange oil, orange juice, macadamia nuts and dates.  It is probably the most expensive pie I ever made, as most of the ingredients are not cheap, but it is one of the best pies I ever tasted! The amount of each ingredient was really perfect, you could really taste the orange oil & juice in the "aftertaste". And all the ingredients are uncooked, organic and actually healthy for you! Of course you don't eat the whole pie at once, so after the pie was made, and we all had a piece with a nice cup of tea, we split the remaining pie and Carolina & Fabio took their half home. We later found out we all ate a little piece each night after dinner as a treat until it was finished! So the whole week we all enjoyed it. So in the end it was something we could enjoy for so long it wasn't an expensive pie at all.

Breakfast: babyfood grows up!

When I was young I always loved a "fruithapje". A dish made out of fruits and other delicious things for breakfast or as a snack.

Organice Your Life team member Dirk Verest and I played with the ingredients and came up with the following modern version of my preferred baby food!

Remember: the eye wants something too, so think of a fun way to display your food, like in a recycled glass jar! Dirk used a 400ml jar. Which he thought was the right size for the right amount of food for a full feeling during the rest of the morning.

Shopping list for 1:  (buy organic and local whenever possible)

- organic (Greek) yoghurt

-  1 Apple

-  1 Kiwi

- 1 Mango

- 1 Grapefruit

- About 2 tablespoons of Teff. a type of grain from Africa that is healthy & gluten free, which is Dirk's favorite grain, and which one spoon helps to keep the shredded fruits form a cohesive mass. (It has to soak up the fruitjuices) You can also try it without Teff, or try another dry breakfast product like oatmeal, Brinta, or Liga, but from our experience this works the best.

- handful of your preferred muesli.

How to make:

Add layers of yoghurt, muesli & shaved fruits in a jar.

This one has layers of:

fruits: * Shaved organic apple & mango, * Cut Kiwis in cubes between. *Mixed with Teff for fibers and essential minerals, * Fresh squeezed grapefruit juice.

Yoghurt: Greek organic yoghurt.

Crunch: organic crunchy muesli.

Costs: Less than €3 euros per person, maybe even less. It all depends on what fruits you put in that make the price go up. The more local and in season fruits you buy, the cheaper it is! Everything is for sale at a regular supermarket, the teff is only available in specialized organic food stores or for sale online.
