Making of Model Chocolate part 2

Hello beautiful readers! I share the cacao love with Organice Your Life® contributor Abigail O'Neill, so what's better than getting together for some model chocolate making with friends? As Lonneke already shared her favorite recipe from Abigail's Model Chocolate book, I'm gonna share mine with you all.

I'm crazy for cookies... only the smell of cookies coming from the oven drives me crazy! So I chose the Chocky Bikkies with almond butter and honey. They are made with cacao nibs for a bit of crunchiness... I absolute love IT ! These are the healthiest I've ever made... Ingredients such as coconut, macadamia , vanilla and honey are the heroes of this awesome mixture above...

The other day at home, my boyfriend Fabio reproduced another great recipe to one of our good friends and everyone was absolute blown away by how easy and tasteful were the Protein Cocoballs!! We've tried out eating them either before and after getting our workout done. It felt good to my body both ways, increased my energy level and helped recovering muscles. They're good as sweet treats after lunch or dinner, as it's made with the best ingredients and superfoods on Earth, so you don't get to feel guilty about eating them. It's pure goodness ;)

Indian Pumpkin coconut soup

Soups are great for the cold days, or just when you are craving a nice nourishing soup!

I like to use coconut milk sometimes to make my soups a bit creamier instead of cream. And since pumpkins are big usually, I like to use half of the pumpkin in a nice oven dish, and the other half to make soup.

Indian Pumpkin coconut soup
A delicious nourishing soup

Cuisine: indian
Recipe type: soup
Serves: 4

Prep time:

Total time: 

  • half a pumpkin, cut in pieces
  • half a can of coconut milk
  • 1 cups of water
  • salt
  • pepper
  • 1 tsp indian curry powder
  • ½ tsp fennel seeds
  • 2 tsp pine nuts
  • handful of (alfalfa) sprouts

  1. Cook the pumpkin in enough water until soft.
  2. Turn heat off, rinse pumpkin with cold water.
  3. Take of skin of pumpkin and put back in pan with a cup of water.
  4. Add indian curry powder, fennel seeds and pepper
  5. Add coconut milk.
  6. Stir on medium heat.
  7. When cooking turn on low heat
  8. Use blender to blend soup
  9. For flavoring add salt.
  10. Taste the soup and add any (indian) herb or condiment to your liking.
  11. Serve in a bowl, add a bit of pine nuts & alfalfa to garnish (or anything else you like)


Organic Marqt

If you are in Amsterdam, go to Marqt, an organic supermarket at Overtoom 21, right in the center of Amsterdam.

Marqt, the concept

The concept seems copied from the famous Wholefoods concept, but Marqt is smaller, cosier and makes you feel like you go back to the old days of going to an indoor market. The food is maybe a bit expensive some say, but it is definitely worth it!

Everything is mostly organic, from local farmers, and they have a lot of recycled or eco friendly products. I love the cheeses, as they have a few vegetarian options! and the bread.... mmmm especially the nut and fruit bread.

Definitely worth going, they have around 20 stores at the moment.

Coconut Water

I love coconut water! I predicted about 10 years ago in NYC that "This drink is going to be big in a few years!" And I was right. Although the USA has already grown accustomed to cooled coconut water drinks for sale close to the cash register at supermarkets , Europeans have recently discovered this amazing drink. Of course those living in South America, Asia and other places where coconuts grow, already know about the amazing properties of coconut water for centuries!

Recently the public has grown fond of coconut water and many have even begun incorporating it into their daily diet. So I am one of these coconut water connoisseurs myself and personally enjoy drinking it first thing in the morning before I get my day started. Its revitalizing taste and ingredients also come in handy before a run or when I need that extra boost at work. Also, when suffering from hangovers, illnesses or burnouts this drink can give a feeling of well-being.

Contrary to what many believe this flavorsome water does not come from ripened coconuts, and rather, is taken from green, unripe ones. This is because ripened coconuts are higher in saturated fat whereas unripe ones are lower in calories, rich in minerals (including potassium), and low in sodium. These nutritious elements help to give coconut water an edge against competitors. Delicious!

Because of the recent growth in popularity coconut water can now be found in most grocery and drug stores. Usually sold in cartons the following coconut water brands are just a few of my personal favorites I like to stock up on regularly (of course fresh coconut water in a coconut is the best).

 The many health benefits of coconut water

Not only is coconut water rich in minerals and low in sodium but it is also low in calories. For instance, one serving (one carton) of Vita Coco contains only 60 calories. This makes coconut water great to incorporate in your diet everyday, or when you are on a special diet to get in shape. Another added benefit many rave about is  as mentioned, coconut water seems to help alleviate hangover, as it hydrates and re-energizes those feeling under the weather better than your average sports drink.

A fun fact about coconut water's history

Even though it’s only recently that coconut water has gained popularity with the general public it has been helping people for years. In World War II injecting coconut water directly into soldiers’ veins helped to save the seriously injured. This is because the electrolyte PH balance found in coconut water matches that of human blood. This little fun fact is just yet another reason why you should take a moment out of your busy day to sip on some delicious coconut water!

Tropical vegan fruit dessert

When I am visiting the Netherlands with my husband, one thing we love to visit his family. My Mother-in-Law Marlies makes the most beautiful and best-tasting dishes. She is a true top chef. This one was my favorite dessert ever, I HAD to have the recipe for this tropical vegan fruit dessert! So I can also share it with you guys :)

Tropical vegan fruit dessert
A delicious light dessert that is all vegan full of healthy fruits!

Recipe type: dessert
Serves: 4

Prep time:

  • 4 avocados
  • 3 oranges,without skin, cut in parts
  • ¼ cup of orange juice
  • 3 kiwis, cut in parts
  • 4 dates, chopped
  • 4 dried apricots, chopped
  • 4 pears
  • 1 cinnamon stick
  • 1 tbsp brown sugar
  • 3 cups of raspberries, mashed
  • Pure shaved raw chocolate
  • ½ a cup coconut milk
  • handful of almonds, crushed
  • 4 tsp of Coconut flakes

  1. Blend the avocados with the coconut milk until fully blended.
  2. Remove the pear's skin and cut in pieces.
  3. Cook pear with the cinnamon stick and the brown sugar in a bit of water until pear goes soft. Cool down.
  4. Add all ingredients layer for layer into a glass.
  5. For each person one glass.
  6. First add the avocado mousse
  7. Then layers of orange, kiwi, pear.
  8. Add the dried apricots and dates.
  9. Add a bit of orange juice.
  10. Add the raspberry mousse on top.
  11. Add the shaved chocolate, coconut flakes and crushed almonds on top
  12. Enjoy!

You can choose another sweetener to cook the pears with, or just leave it out. other sweeteners are agave syrup,maple syrup, honey or stevia.

Raw chocolate, maca coconut shake

Hey Guys here is a simple recipe for a raw chocolate shake.
This shake is packed with antioxidants, protein, essential fatty acids and minerals.

Raw cocoa nibs are packed with essential minerals and vitamins, including magnesium, sulfur, calcium, iron, zinc, copper, potassium and vitamin C.  To top it off its very high in fiber.

Maca powder is known to  balance your hormones. It has been used  to increase stamina, boost libido and combat fatigue. Maca is a nutrient-dense whole food full of vitamins, essential minerals, fatty amino acids.

To make this shake all you need is a young coconut, raw cacao nibs, maca and a banana.

Blend the coconut flesh, coconut water, banana, 1 or 2 table spoons of cacao nibes, 1 table spoon of Maca powder as an option to sweeten add agave .
Being  healthy can be so easy.

Raw Green Coconut shake

As a raw foodie I live of coconuts, spinach and kale so here is one of my favorite shakes that I have every day.

To make this shake you need a full coconut, a handful of kale without the stems and a hand full of spinach and a banana.(As an option you can add a table spoon or 2 of hemp seeds for added protein or sun warrior raw protein powder) I usually add protein powder after a work out to the smoothie.

To make the shake crack  the coconut  and take out the coconut water and flesh . Put it into the blender with one banana, spinach and kale and bend till smooth and creamy.

This takes about 10 min to do .

This is what I have for breakfast almost every day or after a workout. I hope you can enjoy it as much as I do:)

 1. You are a rawfoodie, what does that mean?

Teresa: Being a rawfoodie means eating everything that is still alive and uncooked. Once you cook foods above 104 degrees it looses all the enzymes and most of the vitamins and minerals.  The diet consist of eating fresh vegetables , nuts , seeds,salads and fruit in the purest form . Nothing is processed.

 2. What is your favorite food?

Teresa: I have so many favorite foods. A few things I couldn't live with out are coconuts , avocado, kale, hemp seeds, water melon, spinach, lemons  all fruits and green leaves  and salads. My favorite meal is a huge salad with mixed greens preferable fresh from the farmers market with avocado , hemp seeds, olive oil, lemon juice, sea salt and cayenne pepper.

 3. Favorite restaurant in NYC?

Teresa: My  favorite restaurants are Pure Food and WineCaravan of Dreams Quintessence and ABC Kitchen. Sorry couldn't just pick one. If I had to choose just one it would be Pure Food and Wine. These are just my favorite spots in NYC.

 4. What is your easy thing to take care of your skin or take off makeup?

Teresa: An easy take on skin is to eat the right foods. The purer the better. What you put into you body reflects to your skin. My skin care lines are very cheap and very simple.I wash my face with Dessert essence tea tree oil( I have been using it for over 10 years) . Then I spray my face with pure Rose water from Heritage.( Been using rose oil for 16 years). My moisturizers and serum's are the only things that I switch up but it has to be natural preferably organic . I love organic Argan oil for my face at night.  For my body I use pure coconut oil or rose oil . I take my make up off with Rose water.

 5. Favorite memory of a photo shoot? My favorite memories of photo shoots are always the one's shooting in a tropical Island and feeling like I am on a vacation rather than at work. Eating fresh local foods and drinking lots of coconut water. I have always been the one to request coconuts whenever I am working in a tropical place.

I am obsessed with coconut oil!

New OYL contributor , top model Teresa Lourenco told me about it. So I bought a jar, and started using it all over my body. Not only did it smell great, my skin started glowing! There are different kinds of coconut oils. Some you can also use for cooking. Read labels for what you can use the coconut oil for before buying it.

By the way, that movie by Oliver Stone is not so kosher to put it that way, and if you have a weak stomach please think twice before watching this movie! It is a movie about drugs and weed in USA and Mexico... how you can get entangled into a world you don't want to be in... There was also some great acting and even though blood flowed a lot, watching Benicio del Toro and Salma Hayek act great, was worth it. Other actors in this movie: John Travolta and Blake Lively and 2 other cute actors.


Abi's Pumpkin Pie

Hi again! How's everyone?

Most people who know me know I prefer raw desserts (especially RAW CHOCOLATE!) but every now & then I'll cook an old fashioned favourite with local organic ingredients. Tonight I'm treating the family to pumpkin pie for dessert & I quickly jotted down the recipe as I went so I could share it with you. :) I haven't made it for years! Pumpkins are so fresh and lovely at the markets just now. I use fresh organic eggs in this recipe, because I have well loved hens of my own, but you could replace these with chia seeds.


2 cups pumpkin (I used the 'jap' variety, butternut is also lovely)

2 cups dates

1 teaspoon cinnamon powder

1 cup water

COOK TOGETHER until most of the water is absorbed and the dates & pumpkin soft. Place into blender, then ADD:

1 270ml can coconut cream

3-4 organic eggs (OR two tablespoons chia seeds + 3/4 cup water)

1 scraped vanilla bean or 1 tablespoon natural vanilla

2 tablespoons organic maple syrup, coconut sugar or extra dark brown sugar

Extra cinnamon for sprinkling on top

BLEND until smooth. Pour into prepared crust (below), sprinkle with cinnamon & BAKE 45 minutes in a fan forced over at 175'C or until the pie is nicely set through & slightly browned.


So simple!

2 cups wholemeal spelt flour

1/2 cup oat bran

1/4 cup rice bran oil OR use a little organic butter in place of part of the oil

1 tablespoon organic coconut sugar or extra dark brown sugar

Water. Just enough to bind.

MIX. Press into a lined pie dish & bake until semi cooked at 180'C.

I served the pie at room temperature with pure coconut yogurt & extra maple syrup

Actually quite nutritious & high in protein, good fats & fibre this pie would be perfect served after nice salad with lots of dark leafy greens or as it is with a pot of tea!

Coconut Acai smoothie

If you know me and if you have been reading my posts for a while, then you must know that I’m nuts for Coconuts! Ha!  But seriously, I believe that Coconut Oil is a MUST in every healthy kitchen and bathroom. I use it every single day  as a moisturizer, hair conditioner, meal supplement to name a few.

But today my post is a bout a fresh young green coconuts. The kind you get in tropical countries, where you can purchase it at every corner. Paradise for me! But I live in a City, not on a beach in Thailand,  thats Why I’m super excited about my resent discovery.


I went to my nearest healthy food store where they sell  young coconuts and purchased a couple. My next challenge was to open it! Here comes all-favorite YOUTUBE channel. I learned from this  video How To Open a Coconut. It was much easier then I thought. All you need is a cleaver knife (or a chef knife) and a practice.

It is important to know how to select a good coconut: look at the base  of a coconut. It should be white color! If you see discoloration, purple or green spots, do not buy it!

Since my discovery, I start to experimenting with different recipes that include fresh coconut water and “meat” (the inside part of a coconuts).

Here is one of my favorite super smoothie! It is very yummy and filling, full of antioxidants, vitamins and LIFE!


I always like to share a health benefits, so here it is:

-  coconut "meat" is an excelent sours of a good fat! It helps to remove stored fat from your body. The result - you are loosing weight!

- coconut water is a good sours of electrolits, which are re-charge and re-energize your body! The best sport drink that you can find.

- acai is a little purple berry that grows in Amazon.  This little purple berry is packed full of antioxidants, amino acids and Omega essential fatty acids. Its antioxidant levels outranks nearly every other food on the planet, including; pomegranates, blueberries, and goji berries.



  • 1 young green coconut (water and “meat”)
  • 2 packs of Acai (I use “Sambazone” brand . It comes frozen and you can find it at every health food store)
  • 1 banana


Open a coconut. Scoop out the "meat" using ice cream spoon. Blend water and “meat” in  a blender till smooth. Add the rest of the ingredients. Pour in a tall glass, seat back and enjoy!
