The Best Carrot Ginger Dressing

I am not a big fan of salads, but if a salad has a good dressing on top, I suddenly love it! It is all about the dressing, and this Asian carrot ginger dressing is definitely one of my favorites. And it is super easy to make too!

This dressing you mix well into your salad, and the flavor is sweet (the carrot and sugar), a hint of salt (soy sauce) and sour (rice vinegar). The best carrot ginger dressing brings an all-round flavor that you will love in your salad!

The Best Carrot Ginger Dressing
A super fast and super tasty dressing for your salad.

Ingredients
  • 3 carrots
  • 1 small to medium onion
  • 2 teaspoons grated fresh ginger
  • ½ a cup soy sauce
  • ½ a cup brown rice vinegar
  • 1 teaspoon brown sugar
  • olive oil

Instructions
  1. Clean the carrots and onions, and put in a blender with the ginger, soy sauce, brown rice vinegar and brown sugar.
  2. Blend all together until a smooth texture
  3. Add some olive oil and mix again. (You can add more olive oil if you want to make it more creamy)

Notes
This dressing tastes great with a salad made of iceberg lettuce, avocado, cucumber, sunflower seeds.

I like to eat delicious foods, but don't want to spend too much time in the kitchen. Sounds like a dilemma? I tell you: you can do both!

One dish we made the other day was vegetarian and Indonesian inspired. It took me only 20 minutes!

A delicious Indonesian inspired feast!

We  took vegetarian chicken by the Vegaslager, which is delicious and can compete with the flavor and bite of real chicken. But if you want to eat chicken, choose organic, that's very important. (you don't want to eat meat that has hormones, medication so the chicken can grow rapidly from being born to a full grown chicken in sometimes less than 50 days! Not healthy, so choose wisely, always  choose organic meat) I grilled it on an electric grill in 10 minutes.

We cooked organic brown rice that was quick to cook, within 10 minutes. You can take regular rice that takes usually a bit longer, around 25 minutes.

We baked organic eggs sunny side up.

We added a bit of warmed up, pre-made organic satay sauce (a sauce made of mostly peanuts) by the brand Yakso.

The salad was simple and so delicious! Shred a big carrot. Add a whole avocado cut into pieces. Add herbs/plants like parsley and garden cress cut up. Add pine nuts. For dressing: a bit of lemon juice mixed with blood orange juice. Yummy!

 

Eating fast and delicious foods is all about having simple, fresh ingredients. It is also fun to play with colors. Delicious foods are a feast for the tastebuds, but should also be that  for the eyes!

Another Super Vegetables Soup

I love soups....

And I am going really wild with it!

The other day I made a soup with left over vegetables in my fridge.

Ingredients:

  • stockpot with 8 cups of water.
  • Carrots, celery, zucchini, 2 small onions chopped up.
  • Can of navy beans.
  • One vegetarian bouillon cube.
  • Pepper & Salt
  • and last touch: fresh thyme cooked with it.

The navy beans give the soup a thicker texture, and the rosemary, the bouillon cube, pepper & salt give it such a nice taste.

Super healthy, so I make this soup and since it is all vegetarian, you can keep reheating it (I think it tastes even better!).

I  have soup like this for 3 days in a row, as vegetable soup does not go bad as fast as when you use animal based stock or ingredients.

I love cooking when the weather changes. I make simple stews, soups and casseroles mostly vegetarian, with the best organic ingredients!

This is one of my favorite simple recipes:

Indian lentil soup

Ingredients
  • 1 cup of green lentils
  • 5 small chopped carrots
  • 1 large chopped onion
  • 5 bay leaves
  • spoon of curry powder
  • parsley
  • seasalt
  • pepper
  • food grade argan oil or mild olive oil or any other oil you prefer.
  • 2 organic vegetarian bouillon cubes
  • water

Instructions
  1. For best results soak the lentils 12 hours in water, for better cooking and digestion.
  2. Rinse lentils.
  3. Put stock pot on stove, medium heat.
  4. Add 5 cups of water for 1 cup of lentils.
  5. Add the chopped carrots too.
  6. In another pan sauté the onions with a bit of food grade argan oil, or any other oil you prefer.
  7. Add the onions to stock pot when ready.
  8. Add the bay leaves, bouillon cubes and curry powder.
  9. Add salt & pepper to taste.
  10. Have soup on medium heat for an hour.
  11. Try the lentils to see if they are soft (if you have soaked them before they will be ready faster)
  12. Add parsley to garnish.

Hi everyone!

Yesterday was my first time being on a tv show ever, showing how to make juices and smoothies and mentioning Organice Your Life®! It was the talk  show by comedian Jandino Asporaat, "De Dino Show"  which is very popular amongst young people in the Netherlands.

I could not stop laughing while I was there! Jandino and the other two guests: Philippe Geubels (a Belgian comedian) and Adje ( A Dutch rapper) were so funny! I hope to be back sometime in the future and I hope to do more of these shows too!

I showed 2 recipes:

Lettuce wraps

I use sesame oil to stir fry it as it gives a delicious flavor to the vegetables.

Ingredients
  • butterhead lettuce
  • carrots
  • onions
  • zucchini
  • salt
  • pepper
  • pine nuts
  • sesame oil
  • hot & sour sauce

Instructions
  1. Chop all vegetables until they are all really small cubes.
  2. Stir fry all vegetables in a bit of sesame oil with , pine nuts salt & pepper.
  3. Wash the lettuce, and dry off.
  4. Fill the lettuce leaves with vegetables.
  5. Wrap it up.
  6. Dip in hot & sour sauce.
  7. Enjoy!

Carrot lentil burgers

When I bought a juicer, to make my own fresh juice, I started to think what I could do with the pulp.

The moment I made carrot juice, I thought, I can try to imitate the carrot beignets I got at Piet Hein Eek Restaurant last week, with the leftover pulp!

Ingredients I used:

*carrot pulp

*lentils in a can

*fresh parsley

*1 onion.

*salt

*pepper

*olive oil.

* fresh spinach.

How to make?

Put all ingredients in a blender and chop it until it becomes of a smooth consistency.

Then use a spoon to take an amount out, and use your hands to form a round burger like figure.  Put a pan on the stove and on  medium heat add some light olive oil and the burgers in the pan.

Turn them around when the bottom gets a bit brown. (If your burger falls apart, just use a spoon to form it back to the original form. ) In another pan, let the spinach shrink. Serve together when ready. Add some yoghurt dressing (or another dressing) for extra flavor)

Carrot-Orange-Cucumber juice

When I opened the fridge this morning I found a bag of carrots, oranges and a lonely cucumber laying inside. So, I made a healthy yummy juice for myself! It got me thinking, that you can always come up with a great and tasty meals using what's left in you fridge. Don't waste! If you have to travel for a few days, make a soup of all the veggies the night before. You can always freeze it and eat later.

Natures Food, Designed for Humans?

NATURE AMAZES ME. EVERY SINGLE DAY. Creation speaks loudly, if we would only listen to her voice, we might hear her heart beating closely, to that of our own.

FOOD. Something we think of at least 3 times a day, often more, often without noticing it's intricate design or thinking of it's designer. Maybe it's time we took a closer look.

Fungi for health?... Many mushrooms boast highly of their anti-cancer properties, & yet look at them! Almost like little tumors, springing up all over this tree, hint hint!... Excellent for boosting the human immune system.

Have you ever indulged in devouring a pomegranate, one seed at a time ;) ?... The little seeds, covered in a bubble of antioxidant rich juice & coloured blood red remind me of the cells in human blood which they seek to rejuvenate with their life giving enzymes & vitamins. The seeds contain potent bitter antioxidants too, which protect the cells against free radicals, preventing cancers & promoting youthfullness.

The tomato, excellent for the human heart, looks just like one.

The carrot, sliced into rings; behold & see the human iris as it stares back at you, hinting subtly!! I'm good for you, for your EYES in fact. Helping to prevent macular degeneration & promoting healthy vision.

Look at the fine veins within leafy vegetables. The bursting colour of fruits of all kinds, the cell segments within oranges, berries, kiwi-fruit.

Sweet potato, does it remind you of anything?... It looks like an intestine!

I'm so ASTONISHED when I crack open fresh walnuts. Why?... Well don't they remind you of something??? Dah. Haha. There's definitely a sense of humour there somewhere wouldn't you agree? To think that they are created, designed, to look like the human brain? WOW. Hint hint, 'eat me'!

I'd never noticed that the tiny, potent chia seed is really quite grey, until this morning, & I've been eating them for years! Another super brain food rich in all omega fats.

There are so many various foods which I haven't touched on, celery, herbs of all kinds, bananas, apples, stonefruit, legumes, grains, grasses, flowers (excellent for mood enhancement!). So much variety in colour, texture, flavour. Bitter, pungent, sweet, salty. AMAZING variety abounds! Let's take a subtle or maybe not so subtle tip from NATURE! ENJOY HER BOUNTIFUL GIFTS TODAY, GIVE YOUR BODY what it craves, NATURES very own FOODS, DESIGNED FOR HUMANS. Take note of your next meal, the colours, the shapes it contains, keep it as close to nature as possible & reap the benefits for your internal organs, skin, bones, & feel each of your body systems respond with vitality & life.
