Banana Protein Pancakes

Ever since I was a little girl, I had this romantic idea of me in the kitchen, impressing dinner guests with complex culinary creations.

Unfortunately, this dream died slowly but surely, since I realized I'm way too impatient for the whole process of preparing food. Ain't nobody got time for that. Actually, great chefs got time for that, and thank God for this fact. I, however, am still very far from being the next Nigella Lawson, but I do hate processed foods...so over the years I have learned a thing or 2 about simple but awesome vegetarian and vegan home cooking. I have even accomplished that goal of impressing dinner guests on quite some occasions (as well as burned several pans on the stove and fingers on the oven). I'm always always always always looking for new healthy and delicious recipes, the simpler the better. And boy, do I have a WINNER for you guys & girls right now :)

Protein for breakfast

I'm a big fan of protein in the morning, a hearty breakfast really fuels me for the rest of the day. I also have a very loud and obnoxious sweet tooth that I'm trying to please, without getting unhealthy (the struggle is real). Last week I found an incredibly easy recipe for banana pancakes, and I am now obsessed. Please try it, you'll love them. You're welcome.

Banana Protein Pancakes
Healthy protein pancakes to start your day right.

Ingredients
  • 2 large bananas
  • 2 eggs
  • 1 cup protein powder
  • cocoa powder (to taste)
  • splash of almond milk
  • 1 teaspoon baking powder
  • salt
  • cinnamon
  • coconut oil

Instructions
  1. Mash the bananas with a fork in a bowl.
  2. Mix with the eggs and protein powder.
  3. Don't be a perfectionist: it doesn't need to be be supersmooth, there should be some small chunks of banana in there.
  4. Add the almond milk, cocoa powder, baking powder and a pinch of salt and cinnamon,
  5. Give it another whisk.
  6. Heat a frying pan with a little bit of coconut oil over medium high heat.
  7. Pour or scoop the batter in the pan, using approximately ¼ cup for each pancake.
  8. Cook until pancakes are golden brown on both sides.
  9. Serve hot.

Notes
I don't even use any syrup, they're sweet enough on their own.

My grandma's Banana Cake

I love food and all that is involved with it : searching for the nicest ingredients , prepping  and cooking. In my opinion there is no better reason to gather your loved ones than for a good homemade meal.

When I was living by myself working as a model in France, one way I found to stay connected to my dear ones, specially with my grandma in this case, was to work on some family recipes. My beloved grandma used to make some delicious food in her humble kitchen and my favorite of all times dessert was the banana cake she did with the simplest ingredients.

I took her handwritten recipe note everywhere I went even though I knew the recipe by heart. I liked the way she wrote things down so she would never forget. I was in love withe her recipe books and how disorganized in an organized way they were.

Modeling and baking

Throughout my years modeling around the World, I have made many tummies very happy. My friends used to invite me in so I would bake the cake for birthdays, gatherings and reunions. I was pretty happy to make such a simple task into an event. So I was well known by my grandma's banana cake and now I'm trilled to share it's recipe with all of you.

Like I said, I like to use the simplest ingredients. And the most important one is LOVE.

The Infamous Banana Cake
A delicious banana cake ( unfortunately not suitable for those of you that are lactose or gluten intolerant.)

Ingredients
  • 1 and a half cups of sugar ( of your preference any kind works well - Demerara is a good option)
  • 2 cups of White Wheat Flour ( if your not feeling too evil for the day, you can try the whole wheat version )
  • 1 and a half cups of whole milk
  • 4oz Butter ( 113 grams )
  • Cinnamon
  • 6 to 8 bananas depending on their size.
  • 1 tablespoon of baking powder

Instructions
  1. Pre heat the oven at 380 degrees F ( 240 Celsius ) before starting. Grease a round baking pan with butter. Cut thick rounds of bananas to glue them around the edges and at the bottom of the baking pan.Cover the perfectly placed bananas with cinnamon powder and make sure they are all covered with a thin layer of the spice. After that in a separate bowl, mix in the flour , milk , butter ( it can be melted or cut it in big numbs ) , baking powder and sugar. There's no need of mixer machines to make this mixture, you can air it out with a simple hand tool. If you opted to not melting the butter, don't bother if the mix doesn't look perfectly smooth and you can still see the numbs of butter, that's one of my grandma's secrets! Pour this tick mixture on top of your bananas and cover the top with cinnamon again and the same amount of sugar, so it gets a little crunchy skin. Put in the oven to bake for about 30 minutes. Check if it's baked sticking a toothpick in the center if it's not, let it in the oven for another 5 minutes os so.

Blue Monday Green Smoothie

Love this simple yet delicious light Blue Monday morning Green Smoothie! I love to take some maca mixed with it, because my hormonal system is a bit off, and I learned that Maca could help with unbalanced hormones in a body, as well as build stamina, strength and increase fertility :)

  • 2 bananas
  • 1 half diced mango
  • Handfull of fresh spinach
  • a cup of almond milk
  • a cup of coconut water
  • 1 tsp of wheatgrass powder
  • 1 tsp of maca root

Instructions
  1. Blend all together and pour in 2 glasses, enjoy!

Notes
Smoothies are great when you drink them in the morning.
Smoothies are also great if they don't contain too much sugar. Therefore keep the amount of fruits in a smoothie to less than half of the total amount of smoothie you make! A Smoothie preferably made with low glycemic ingredients is the best really.

Maca has been known for helping to support the endocrine system and helps to deal with stress. Maca has shown positive results in people in balancing hormones and increasing fertility as well as building strength and endurance. Maca has an abundance of minerals and vitamins as well as plant protein.

 


Purple Power Smoothie

While I believe in a diet based on local foods, mostly plant based, I do occasionally use Superfoods. For instance in my smoothie. But while Superfoods are foods that have a high nutritional value, they can be expensive. That's why I eat them one at a time, and in a can't-go-wrong recipe, like a smoothie! You don't have to stock your whole kitchen with Superfoods, but try them one at a time, just like me!

Try this Purple Power Smoothie with Acai powder. Acai Powder comes from Acai berries that come from the Acai tree that is found in the Amazon rainforest. It is high in antioxidants and that means it can reduce the power of destructive free radicals which your body produces as a byproduct. Eating a diet rich in antioxidants can help reduce the risk of some diseases like cancer.

So enjoy this Purple Power Smoothie any time of the day! (Great as a breakfast smoothie) I added a bit on top of the smoothie for the color :)

  • 1-2 tsp of acai powder

Instructions
  1. Mix everything together in a blender until smooth, enjoy!

Notes
I add a tablespoon of unsweetened hemp protein for extra protein and/or teff (love grass) for their high nutritional value including amino acids.

You can also use another kind instead of rice milk, like regular, soy, almond or hazelnut milk.

 


Raw chia seed pudding

I love chia seeds! If you have never try chia seeds, you are missing out on something nutritiously important!

Chia seeds are full of fiber, antioxidants, rich in essential omega-3 fatty acids, phosphorus, manganese, potassium and calcium. I'll give you an easy recipe, so you can start to incorporate chia seeds into your diet.

Chia seeds facts and precautions:

  • A research done by the St. Michael's Hospital in Toronto, Canada has indicated that chia seeds are potentially capable of lowering diastolic blood pressure to alarming levels. So, low blood pressure patients should steer clear of it.
  • Chia should be consumed in short phases followed by break periods as some cases have shown people getting addicted to it.
  • Pregnant and lactating mothers should keep away from chia seeds as not enough researches have been conducted to check for its effects on them.

I prefer to eat chia seed pudding for breakfast!

  • 3 T spoons chia seeds
  • ½ cup of almond milk (or your choice of milk)
  • ½ cup of blueberries
  • 1 banana cut in pieces
  • Cinnamon
  • Vanilla

Instructions
  1. Put chia seeds into a bowl. Add cinnamon and vanilla.
  2. Mix well.
  3. Pour almond milk on top.
  4. Mixing it from time to time, in about 10 minutes you will see chia seeds absorbing almond milk: it’s no longer a liquid, but looks like a pudding.
  5. Add blueberries and banana. Enjoy!

My Jamaican vegan dinner!

Jamaican vegan dinnerI made this dinner the other day as I love Jamaican food, but I wanted a vegan twist.

You need the following organic ingredients for this dish for 2 people:

*1 piece of seitan sliced into pieces

*2 plantains or bananas

*400 grams of brown rice

*1 can of black beans

*coconut flakes

for the "jerk" seasoning:

* 2 cloves of garlic

* 2 tablespoons of maple syrup

* 4 tablespoons of tamari

* half an onion

* a piece of fresh ginger as big as your thumb

* 1 teaspoon of ground cayenne pepper

* 1 table spoon of dried thyme

* 2 table spoons of olive oil

* 1/2 teaspoon of ground cinnamon

* 1 teaspoon of ground nutmeg

* lemon juice

* a few leaves of fresh cilantro

*frying oil (I prefer coconut oil or tea oil)

How to make:

Grind all ingredients for the  "jerk" seasoning. (you can add ingredients for your own favorite flavor) Rub it on the seitan pieces. Let it sit for about 1 to 2 hours.

Rice and beans: Cook the rice and drain. Drain and rinse the black beans from the can (if you don't rinse the beans you are more likely to get gas after eating.) Mix the drained & cooked rice with the black beans.

Plantain (or banana). this to add a sweet touch. Cut the plantain in slices of the size of your thumb. Put in a pan with enough cooking oil so you can fry them until they become soft. Sprinkle coconut flakes over it.

Seitan: drain the seitan from the jerk seasoning but keep the leftover. Grill the seitan in a pan until hot and tender. Add the seasoning at the end for a few minutes to heat up.

Serve hot. Add fresh cilantro, Enjoy!

Lonneke on De Dino Show

Hi everyone!

Yesterday was my first time being on a tv show ever, showing how to make juices and smoothies and mentioning Organice Your Life®! It was the talk  show by comedian Jandino Asporaat, "De Dino Show"  which is very popular amongst young people in the Netherlands.

I could not stop laughing while I was there! Jandino and the other two guests: Philippe Geubels (a Belgian comedian) and Adje ( A Dutch rapper) were so funny! I hope to be back sometime in the future and I hope to do more of these shows too!

I showed 2 recipes:

You want to incorporate healthy foods like smoothies into your life but don't know where to start? I give you some easy simple tips so you can start right away!

STEP 1: Buy a GOOD BLENDER. The quality of the blender is really important because a smoothie really needs to be blended well to get best result for taste and texture. The more watts usually means better crushing of tough foods like kale or ice. I like the ones with a square glass container as it helps the blending process. (foods are thrown into the corner and bounce back into the middle.) There are many good ones. Vitamix, Magimix and Breville are good brands. Check out reviews online before you buy yours. the sound of the machine while working is important too. I don't like it when it is making too much noise.

STEP 2: Work with FRESH CLEAN FOODS. The most important thing is that you always work with foods that are good to eat. Not going bad.  And cleaned thoroughly. As it changes the flavor right away and maybe ruins the whole smoothie if you put in only one ingredient that is not totally clean or fresh. leafy Greens are great as they have A LOT of essential minerals and vitamins. in a smoothie with fruits you won't taste it but you take it in. Try it! Options are: Spinach, Kale, Parsley Collard Greens, Romaine.. anything you like. They are good juiced too :) Other vegetables like carrots and beets can work too. STEP 3: SAFETY. Place the blender in a safe place when you work with it and make sure the lid is tight.

 FORMULA OF A SMOOTHIE:

1. 1/3 liquid (That can be anything you like: water, almond milk, rice milk, milk, hemp milk, soy milk etc)

2. 2/3 fruits and vegetables you want to blend. (the more fruits, the sweeter it will taste.)

3. spoonful of extra ingredients like vitamin powders.

blending takes +/- 15 seconds. So making this is like less than 5 minutes with cleaning the ingredients and the blender included!

So my favorite smoothie is:

-Almond milk

-Kale

-Banana

-Vitamineral or Detox powder or any healthy powder.

Just blend and enjoy! Or I get it at Juice Generation at Equinox Gym, that's easy too ;)

Raw chocolate, maca coconut shake

Hey Guys here is a simple recipe for a raw chocolate shake.
This shake is packed with antioxidants, protein, essential fatty acids and minerals.

Raw cocoa nibs are packed with essential minerals and vitamins, including magnesium, sulfur, calcium, iron, zinc, copper, potassium and vitamin C.  To top it off its very high in fiber.

Maca powder is known to  balance your hormones. It has been used  to increase stamina, boost libido and combat fatigue. Maca is a nutrient-dense whole food full of vitamins, essential minerals, fatty amino acids.

To make this shake all you need is a young coconut, raw cacao nibs, maca and a banana.

Blend the coconut flesh, coconut water, banana, 1 or 2 table spoons of cacao nibes, 1 table spoon of Maca powder as an option to sweeten add agave .
Being  healthy can be so easy.

Raw Green Coconut shake

As a raw foodie I live of coconuts, spinach and kale so here is one of my favorite shakes that I have every day.

To make this shake you need a full coconut, a handful of kale without the stems and a hand full of spinach and a banana.(As an option you can add a table spoon or 2 of hemp seeds for added protein or sun warrior raw protein powder) I usually add protein powder after a work out to the smoothie.

To make the shake crack  the coconut  and take out the coconut water and flesh . Put it into the blender with one banana, spinach and kale and bend till smooth and creamy.

This takes about 10 min to do .

This is what I have for breakfast almost every day or after a workout. I hope you can enjoy it as much as I do:)


The Green Smoothie

I want to share another great recipe.  It's super easy to make and very beneficial for your health; I have to tell.  The ingredients you'll need for this recipe Im sure you have in your fridge right now, but you'd never think to combine them all together.  So, let' see:

  • 1 or 2 bananas
  • 1 Gala apple
  • 2 cups of spinach
  • 2 cups of fresh water

Put everything in blender and run for 30 sec, or until everything blends very well.  That's it!  The Green Smoothie is ready.

It's so yummy, you wouldn't believe it!  Don't worry about the spinach; you will not taste it at all.  All you taste are bananas and apple!  The spinach adds so many vitamins and minerals to this drink!

You can have it for breakfast or dinner or as a snack in between the meals.

If you like this recipe, later you can experiment with different greens: kale, arugula, mint, romaine, etc.  As with fruits, you can use blueberries, pears, melons, or mangos.

This smoothie contains so many nutrients your body craves that by drinking it, you will loose your cravings for unhealthy food.

Breakfast YAY!

Hi everyone!

Im sorry it's been a while since I've written anything!

Well, Its January, And I have lots of New Years resolutions. One of them is eat as healthy as possible and workout a minimum of 4 times a week. (and try to keep it up for longer than a month) ;)

Sometimes when I get motivated to eat healthy and to tone up a little more, I think of a drastic quick way of doing it, but that would end up in me over eating at the end of the week because I felt so deprived.

The way to eat healthy is ofcourse something we have all heard a billion times. Eat lots of fruits and veggies, grains, low-fat dairy (if you aren't a vegan) Lean Proteins (if you are not a vegetarian)

So now to not fall back into old patterns here's a tip I want to share that helps me stay on track and doesn't make me feel starved during the day..

-Eat a great breakfast. A breakfast you actually enjoy to eat. Of course make it as healthy as possible. So for example if you love pancakes, make them but use whole grains, top it with fruit and alittle agave nectar. That will give you fuel throughout the day (and make you happy!)..

For my favorite breakfast at the moment I cut up a banana, I put it in a bowl, I add flaxseeds, raisins, muesli (nuts and dried fruits added in there) and scoop yoghurt (sometimes soy yoghurt) over it. I make sure the bowl is completely filled, no stingy portions aloud especially when its healthy like that! I take my time to eat that with a cup of green tea..

I dont feel the urge to eat much for the rest of the day because breakfast satisfied me so much. If I feel the urge to eat a lot of something that I know if bad for me later on in the day I say no, wait until tomorrow morning..(ok it doesn't always work haha)

Then for the rest of the day I do like to eat lots of greens and fruits.

I look forward to start the day and don't feel depressed because I'm thinking "argg another starving diet day" ;)
