Raw Mini Christmas Puddings

Hi everyone at OYL!!! Well here it is. Last minute post of the year for me! I was in the kitchen this afternoon making up a raw non-chocolate version of my 'Choka-fruit Puddin' (recipe in my book) and of course posted a pic to Instagram promising to share the recipe. So here it is. These tiny puddings are the most simple, delicious Xmas treats you'll ever make, and so good, that when people find out they're healthy as well, they will probably beg you for the recipe.

Ingredients
  • ¾ cup organic dried cranberries
  • ¾ cup organic pitted dried prunes, diced
  • ¾ cup mixed organic sultanas and currants
  • 1 Tablespoon organic goji berries
  • ½ cup dried Kiwi Fruit, optional – for colour, diced
  • 8 large pitted Medjool dates, chopped
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla powder
  • Zest of 1 organic orange
  • Fresh juice of 1 orange
  • 1 dessertspoon rum (for flavour only, optional!)
  • ½ cup hot water
  • 2 cups almond meal (OR to make nut free – you may use ground coconut instead)

Instructions
  1. Mix together all dried fruits, spices, freshly squeezed juice, hot water and rum if using.
  2. Place this mixture at room temperature for 12 – 24hours, 2 of those hours may have mixture placed into the sunlight or in a warmer place. To be honest I didn’t have time, so only sat the fruity mixture in the sun for 1 hour then continued on with the recipe.
  3. Add in the almond meal and mix well. Form mixture into mini puddings with your hands, and decorate with goji berries or anything you fancy. Sit them in little muffin-tin liners and chill until Xmas day!
  4. Serve at room temperature or slightly warmed, with freshly made raw coconut cream, raw banana or mango ice-cream (made by simply whizzing up frozen fruit in a food processor) ‘The Dreamcrème’ (again, in my book) your favourite vegan ice-cream, or yogurt such as Co-Yo.

I came across this caption this morning 'Food is the new Black'. Love it. It sums up my concept of modern food preparation nicely. So I shared it on my Instagram. As many of you know, over the last couple of years I've poured my heart and soul into creating a book called 'Model Chocolate'.

Often in the not-so-distant-past, gluten free, dairy free, sugar free, vegan or vegetarian food has been considered 'rabbit' or 'hippie food' by mainstream food lovers. I personally wanted to change that. When I came up with the idea of my 'superfood meets fashion' styled cookbook, my desire was that it would revolutionise the way people thought about 'healthy' foods, and to inspire them that alternative food preparation could be as interesting, delicious and even spunky as the food they were used to. Actually, healthful, nutritious and deliciously natural foods are much more than that! Real food, unprocessed, and prepared as close to nature as possible more than just satisfies. It helps to create the wonderful synergy within our bodies to inspire change on more than simply a physical level. It uplifts the way we think, the choices we make in other areas of our lives, and motivates inspiration to live richer lives than what we considered possible.

So let me encourage you to 'get your VOGUE on'! By that I mean go with the still-fairly-new trend of a healthier way of eating. Why not take the plunge and experience all that life has to offer you. It's becoming easier than ever to choose natural, organic, life-filled foods. EXERCISE = EMPOWERMENT

fitness-motivation3Lets talk about exercise! No rather... let's talk about EMPOWERMENT and how wonderful it is to feel powerful, healthy and sexy (or beautiful) in one's own skin.

I've always been an exercise lover. From quite young I loved horseriding, swimming, running long distances and dancing. I always wished I was a ballerina. More recently I've enjoyed mastering the art of surfing my 9.4 longboard, and probably less than I'd like, practicing yoga. Then I wrote a book! Yes, talk about a lot of sitting, eating, and radiation! I now well and truly know how that feels. In the last 3 years I certainly have exercised a lot less than I like to recommend, and, for many days, even weeks, I skipped exercise altogether. The awful thing is - the less you exercise, the less you feel like exercising, and the worse you feel all over - all of the time! The great thing is - The more you exercise, the more you become utterly addicted to the wonderful way you feel in all aspects of your life, and in every moment of the day or night! ;)

Most recently, I've been tapping back into my usual obsession with exercise... and LOVING IT. I've began Bikram Yoga once a week, throwing in the odd walk and surf, and its working wonders on my perspective, body, and strength.

Here I am trying on a new sporty outfit on my anniversary last week! I felt so so good!... EXERCISE truly does = EMPOWERMENT! I wore it to a local Bikram class, and I'm sure it helped me perform with even greater stamina! The more I exercise, the prettier and more energetic I feel which in turn makes me want to exercise more; which then makes me feel more satisfied and excited about life. This is the power of exercise. Let's tap into it!

And remember... we're not living in heaven, so there'll always be some aspect of PAIN in a day! You choose. I choose. We either choose "Joy now (sitting around, choosing not to exercise), pain later (feelings of 'fat', 'ugly', 'moody', 'unhealthiness')" OR we choose "Pain now (exercise!), joy later (incredible feelings of 'elation', 'beauty', 'body acceptance')" – hmmm what's it going to be today?... I must confess after all that typing, I'm desperate for a beautiful walk in the fresh Winter air!

RAW CHOCOLATE FONDUE idea

Fruit suggestions ~
Mango, cut into chunks
Strawberries, halved
Starfruit, sliced into stars
Fresh nectarines, pitted, quartered
Cherries, grapes or lychees, whole
Banana, sliced

OR any seasonal organic fruits of your choice - express yourself!

Fondue Dipping Chocolate

I love a plain raw chocolate recipe such as my Classic Dark (in the book) for dipping, or simply use any of your favourite raw chocolate recipes!

Prepare raw chocolate of your choice. While cacao or coconut butters are melting you can start chopping your favourite fresh fruits and making up a beautifully arranged platter. Place a couple of small forks on the side. Finish mixing up chocolate and serve in a small bowl at the centre of the fruit plate. No need to keep warm. Enjoy! The raw chocolate should thicken naturally as it stands depending on the weather. <3

A BEAUTIFUL ALKALINE BODY

Did you know that you can actually make your body more beautiful, simply by becoming more ‘alkaline’? Your body has a delicate pH balancing system in which it works to keep equilibrium & stop your body fluids from becoming more ‘acid’ or if needed, too alkaline. I’m going to focus on the alkalising bit in this article as we very rarely get ‘too alkaline’ in our modern day, fast paced, un-natural lives!

Think of it this way…

ALKALINE = Improved health, extra energy, enhanced beauty, toned & more supple body, glowing skin, sparkling eyes, lustrous hair, high libido, healthy nails, faster wound/injury healing, flexibility, strengthened immunity, feeling of lightness & balance within the body, mood enhancing/positive mind.

ACID = Lethargy, sickness prone, cellulite, bad breath, slow healing, sagging skin, bloodshot eyes, dark circles, falling hair, acne, dandruff, low libido, tight muscles, painful joints, aches/pains, headaches, brittle nails, feeling of heaviness, clumsiness, depression/negative mind.

Without going into extensive scientific details here on pH know (Antoniette HELP! lol)... I'm pretty sure the term 'pH' refers to the alkalinity or acidity of water solutions. Ie: your blood & body fluids, but can refer to the watery + mineral content of anything from soil to water to plants etc. There are wonderful books, charts & informative material on the web you can discover to educate yourself on saliva & urinary pH testing, which can be a highly beneficial monitoring system. This said I usually gauge my 'alkalinity' by the way I feel!

Foods that promote Alkalinity

Raw foods especially vegetables & green foods, spring water, almost all fruits, raw milks & cheeses, cultured foods such as sauerkraut (recipe to come!), kefir, kombucha & others. Lightly cooked vege’s & broths. Freshly pressed fruit & vegetable juices, wheatgrass juice, green drinks & smoothies. Fatty fish. Almonds. Sufficient rest. Yoga. Moderation. Light stress free exercise which is enjoyable. Sunlight, hydrotherapy & fresh country air. The sea. Love, laughter & peace of mind.

Of course, there are more but these are some of the big ones you want to make sure you’re doing or not doing!

Things that contribute to Acidity

Denatured foods such as white sugar, white breads/biscuits/pastries, red meats, soft drinks, smoking, late nights, excessive technology, fluoridated water, overwork, city air, excessiveness, coffee/tea, antibiotics, preservatives/flavourings/colourings, dried fruits, high protein foods (even natural foods, eat moderately), high intensity exercise or labour, lack of sunlight & stress.

Ways to create an Alkaline body

More ways to create an alkaline body would be to indulge in salt glows (scrub moistened skin all over warm body vigorously with sea salt until pink, rinse, towel dry), dancing in the rain, nature walks by the sea or rainforest, loving the dog/horse/budgie or people in your life, deep breathing, walking barefoot on dewy grass, aromatherapy treatments/massage.

Another thought

Don’t you find it interesting to think that the foods which are most beneficial to our health/vitality & wellbeing are the foods which grow in the most abundance & require little or no preparation to enjoy? I’m meaning fruits & vegetables as opposed to meat (needing much land for grazing & spoils easily), grain/nuts/seeds (more difficult to process than fruits & vegetables) etc. Herbs grow in astonishing abundance & almost without cultivation! Herbs are something which I feel we should be consuming more of daily. Also greens, fruits of all kinds, vegetables, grasses/sprouts, & milky grains (such as fresh corn on the cob)…These foods are readily accessible & perfect alkaline nutrition. Even an avocado is rich in valuable nutrients, good fats & is beautiful in alkalinity. These are foods that promote beauty, health & wellbeing in the way we look, think & feel. They fit into our hands perfectly, our mouths & even look like our body systems, organs & sometimes even diseases (now that’s freaky! natures food designed for humans). There's really so much to discover on this subject of alkalising... The effects upon our bodies is immense so do look into it further if you are passionate about health & especially, healing.

Probably the best thing about alkalising is, YES, we will look more gorgeous, there’s no doubt about that whatsoever. It works, making you more beautiful with every positive choice you make. But to me, what's even better than the other best part about alkalising, is in the way makes me feel. AMAZING, fresh, youthful & buzzing with ideas. Every. Single. Day.

Raw tart with Tangerine Kiwi & Lucuma

Just whipped this (non- chocolate) Winter (it's Winter in Australia) treat and had to share it with you all. It's easy to make, delicious, and... raw!

This superfood infused recipe will delight the senses and revitalize your body with unbelievable goodness. Packed with antioxidants, good fats, vitamins and minerals this tasty tart is made for sharing! I like to use 100% raw (fresh off the tree where possible), cold pressed, organic ingredients when I make it.

Raw tart with Tangerine Kiwi Lucuma

Crust:

1 cup organic apricots or figs

1 cup desiccated coconut

1/2 cup brazil nuts

Whiz all ingredients together in food processor until crumbly but beginning to bind. You can test this by pinching a little together between your fingers. Line the base of a 22cm tart tray with this delicious raw crust. How easy was that?! Continue on to make filling.

Fruity Filling:

1 cup tangerine juice (or tangy-sweet mandarin juice)

1/4 teaspoon vanilla powder

1/2 cup raw organic coconut oil (make sure you use one you know is dessert-worthy such as Coconut Magic)

2 ripe bananas

2 - 3 tablespoons lucuma powder (a superfood! lovely in smoothies, desserts, raw chocolate, mild tasting and rich in valuable nutrients)

6 sweet ripe kiwi fruit, sliced into rounds

1 large passionfruit, for topping

1 tablespoon extra desiccated coconut, optional sprinkling

Place 3 sliced kiwi fruit at the bottom of tart crust. Whiz first 5 filling ingredients together in the food processor until velvety smooth. Pour half over kiwi fruit, then layer on 2 more sliced kiwi fruit and top with remaining tangerine mixture. Decorate the centre lastly with remaining sliced kiwi fruit, passionfruit, and sprinkle coconut around edges. Yum! Place in fridge 2-3 hours to set, or 1-2 hours in freezer. Serve with lots of love and laughter :)

Variations: make this dessert with fresh blueberries or raspberries in place of kiwi fruit, sliced stonefruit, or any fruit! Try different fresh juices such as pineapple with summer fruit tarts. Make the filling creamy rather than tangy by using my Rawlicious Cashew Mylk. A vanilla, banana cream pie is amazing created this way. I use dates in place of apricots in the crust when making a creamy fruit tart variation.


super power smoothie

Hey!! How's everyone! :) I'm rushing out the door with one of my delicious smoothies in hand and a list from here (Australia) to NY, well maybe not quite that long, but there's a lot to do today! Here's a fresh and fruity a variation of my Model Chocolate Super power smoothie. You may have seen some of my smoothie breakfasts popping up on Instagram. Today I opted for the greens, berries, kiwi and banana with chia seeds and cacao nibs - they're on top so you can't see them in the picture! I also added some probiotic powder and extra water to the coconut water and pulp.

Ingredients
  • 1 green coconut, water & pulp(if you can't find a fresh one, use coconut water in a package)
  • 1 cup frozen strawberries, blueberries or any berries!
  • 1 tablespoon or less chia seeds
  • 1 tablespoon raw cacao nibs
  • Optional Extras:
  • 2 teaspoons acai, maqui powder or small handful goji berries
  • 2 brazil nuts + gel of 1 medium aloe stalk
  • 1 tablespoon rice protein, or hemp protein powder, will change the flavour
  • 1 teaspoon barley green, spirulina, or 1 handful of baby spinach leaves
  • 1 teaspoon maca, mesquite or lucuma powder
  • Frozen banana/mango chunks or raw honey, if you want it sweet
  • Pineapple or kiwi fruit, passionfruit
  • 2 teaspoons bee pollen + ½ teaspoon probiotic powder
  • Extra water if needed

Instructions
  1. Put in blender.
  2. Mix.
  3. Pour in a glass.
  4. Enjoy!

 

This smoothie is true power food. Just experiment to get it how you like it or need it on the day. Energizing, beautifying, superfoods! Addiction plus. Sometimes I want it creamy not fruity and I'll use my 100% raw Super gorgeous Almond Mylk (in my book) as the base and no tart fruits adding raw cacao powder as well! Mmmm!

SUMMER IN OZ

What's your favourite season? Are you obsessed with Winter coats, layering and snuggly fireplaces? I must say the feeling of jumping into the car turning on the heater full blast whilst drinking copious amounts of green tea on the way home from a Winter surf is one of my favourite cold weather moments. So invigorating!

I don't know if it's because of my Portuguese heritage but I do utterly obsess over Summer! Absolutely. I love Spring too - as it heralds the onset of warmer days, exotic fruits galore and fresh flowers :)

Above are a few random i-pics by me - you may have seen some on Instagram already.

It's Winter season down under, but wherever you are it's important to feel warm for healing, beauty, and life. Some of my favourite tips to stay warm and energised are:

*Cold showers - yes even in Winter (best taken after a brisk walk or some form or activity, and with warm clothes ready to put straight on) boost the immune system and strengthens will power, mind and heart. Keeps you young and toned too!

*Vigorous Exercise

*Sunbaths - when its out, strip off & lay in it!

*Raw foods - even if its just a fresh juice, or a carrot before lunch

*Spices such as Cayenne, Ginger, Garlic

*Chocolate :) always makes me feel warm inside!

I love good food!! It is my no 1 passion.

I also love learning about the human body, health/healing and wellness is a lifelong fascination of mine...and if you haven't guessed it - I love FASHION. I love this industry with all the gorgeous artistic minded people who come together to create absolute genius. I love models! Models are beautiful people yes, but they are also very intelligent and at times vulnerable, real people with real hearts which can be broken! I love life. I love making life a celebration daily. Don't you? Isn't it a wonderful thing that you and I have the power to choose health today? To choose delicious, vibrant, life giving foods?

Strawberry-Nibbed Smoothie

HI LOVES! ITS BEEN AGES & I'M JUST A LITTLE HIGH ON CACAO LOVE RIGHT NOW WITH ALL THE FUN WE'VE HAD SHOOTING FOR MY BOOK (Model Chocolate) (BTS pic - it's all that cacao) ... TO SHARE THE LOVE HERE'S A SPUNKY LITTLE SMOOTHIE THAT'S SERIOUSLY DELICIOUS EASY & DEF NOT  SENSIBLE THAT YOU CAN USE >>> NOW. MMM (THIS SHOULD SOO BE IN MY BOOK!) MAKETH ONE SO CONTAGIOUSLY GLEEFUL! :D

 

Ingredients:

1 young green coconut, water & pulp

1 handful of raw cashews

1 heaped cup frozen strawberries

1/2 cup frozen blueberries

1 cup water

1 tablespoon cacao nibs (oooohhhllaalaa)

1 tablespoon chia seeds

In the blender - cream cashews & frozen strawberries with coconut water, add everything else, BLEND until smooth. SOO YUM. Only beware - you may get the happies while taking in this EXTREME beauty food. Makes two medium or one big smoothie.

Tip: this smoothie is excellent for people wanting to avoid excess sugars, a lovely treat if you're on an anti-candida diet. Low glycemic, hydrating goodness.
