I love soups…. And I am going really wild with it! The other day I made a delicious leftover vegetables soup with anything I can find in my fridge.

Don’t throw away food

At one point during the week you look in the fridge and see some vegetables starting to go bad. Don’t throw them away! Just peel and cut them and use any leftover vegetables and herbs to make a delicious soup!

When do vegetables go bad?

I always check every vegetable thoroughly. If I see mold I throw it away, but if I just see a patch I just cut it and use the rest of the vegetable.

This is a nice recipe that anybody who doesn’t know how to cook can make:

Leftover Vegetables Soup
a delicious soup using any leftover vegetables you have in the fridge.

  • 8 cups of water.
  • 1 (or more) Onion
  • Any vegetables you have in the fridge including carrots, celery, zucchini, tomatoes etc.
  • You can even add chopped potatoes
  • Can of beans, drained and rinsed thoroughly
  • One vegetarian bouillon cube or fresh herbs
  • Little bit of olive oil or any other kind of oil or butter
  • Pepper & Salt
  1. Sauté the onion in the (olive) oil (or butter) on medium heat
  2. Add the vegetables and a bit of salt
  3. Stir for a bit until they brown too
  4. Add the water, beans and the herbs or bouillon powder/cube.
  5. Cook for 45 mins (or until all vegetables are soft
  6. Taste and add salt and pepper to your liking
  7. Enjoy!

More things to add to your leftover vegetables soup

  • You can even add things to your soup like (leftover) cooked pasta, cooked rice or cooked potatoes.
  • As a nice (non-dairy free) addition you can add some kind of (hard or soft) cheese for flavor. I like blue cheese, or parmesan cheese!
  • Or a bit of vegan cheese
  • fresh herbs like parsley or cilantro on top
  • pesto or harissa
  • Gomasio (sesame salt) or roasted pine nuts are delicious too!
  • A piece of toasted bread ( with cheese)

The beans and or carbs like potatoes give the soup a thicker texture.

 Eat the leftover vegetable soup on another day

You can keep reheating the soup (I think it tastes even better!). I  have soup like this for 3 days in a row, as vegetable soup does not go bad as fast as when you use animal based stock or ingredients.
