For breakfast I had blood orange juice, and stir fried left over rice and veggies in curry I had in the freezer (everything tastes much better after a second heating!)

For lunch One Lucky Duck‘s Pumpkin seed and herb salad with greens, kale, cilantro, mint, hemp seeds, pumpkin seeds, macademia parmesan, pumpkin seed lemon dressing with a glass of their fresh coconut water. Their food is raw, vegan and organic. You feel super revived after eating that stuff!

For Dinner I made a Lentil soup!

Ingredients:

  • Red lentils
  • Scallions (3 )
  • 3 medium carrots cut
  • 3 medium celery cut
  • Salt/pepper
  • Bay leaves

How to make it?

  • Put everything in stockpot.
  • Add water until everything is really under water. (If during cooking the soup dries up add more water).
  • Put on stove on turn  low heat and let it cook for an hour. The lentils became soft and spread all over the soup.
  • Take out bay leaves.

Super healthy, tasty and filling! :)
