The Best Carrot Ginger Dressing

A super fast and super tasty dressing for your salad.

  • 3 carrots
  • 1 small to medium onion
  • 2 teaspoons grated fresh ginger
  • ½ a cup soy sauce
  • ½ a cup brown rice vinegar
  • 1 teaspoon brown sugar
  • olive oil
  1. Clean the carrots and onions, and put in a blender with the ginger, soy sauce, brown rice vinegar and brown sugar.
  2. Blend all together until a smooth texture
  3. Add some olive oil and mix again. (You can add more olive oil if you want to make it more creamy)
This dressing tastes great with a salad made of iceberg lettuce, avocado, cucumber, sunflower seeds.
