Lonneke asked me to start writing about family meals. So, here is a dish that my family really loves. Of course I will still post a few of my raw dishes that my family enjoys as well. All though I am a raw foodie, my family eats vegetarian cooked meals. I do taste the food whenever I prepare it. My daughter is a vegetarian so I cook a lot of grains, beans and vegetables for her. Today I am going to give you my Brown Rice and Butternut Squash Risotto Recipe.

I don’t really ever measure anything. I just go with my feeling with how much of an ingredient I need for the meal.

My Brown Rice and Butternut Squash Risotto Recipe

Here are the ingredients:

  • A half of an organic butternut squash
  • Organic scallions
  • 1 Table spoon of organic vegetable bouillon
  • 1 Tablespoon of organic Coconut oil
  • 1 organic garlic clove
  • 1 Table spoon of organic pumpkin seeds
  • 2 Cups organic brown rice

Its a very easy dish to make.

  • Bring a pot of water to boil then add all ingredients  to the boiling water.
  • Cover the pot and boil for 40 minutes till everything has simmered down.
  • That’s how easy it is to make a pumpkin risotto.
  • To top it of you can add a table spoon of butternut squash oil.
