Actually raw cacao chocolate is a wonderful superfood for any one of us who wants to look & feel our very best, as well as have the energy to meet our superhuman lifestyles!
Today I’m going to give to you one of the 60+ recipes from MODEL CHOCOLATE – my supergorgeous raw chocolate recipe book, due out later this year.
This recipe is cheap, simple to make, & tastes delicious! It’s raw energy food you can make in 10 minutes to have on hand all week (if it lasts that long!).
Creamed coconut is available from good health food stores or supermarkets, you can get it in a jar – such as the beautiful Artisana brand – which is more expensive, or in a blocks such as Royals which make this recipe super cheap! Find the blocks at Asian supermarkets or again, from the health food store.
Abi’s Model Chocolate Eco Block
200g creamed coconut
2 big tablespoons raw honey or more
1 tablespoon cold pressed rice bran or coconut oil
1 teaspoon vanilla powder
1 big tablespoon nut butter, optional (makes a slightly softer creamier chocolate)
½ cup chopped raw brazil nuts
½ cup mixed sultanas, currants & raisins
Pinch fine sea salt
1/3 cup organic raw cacao powder
Line a flat tray with foil or non stick baking paper. Place creamed coconut into a glass bowl to melt over a larger bowl of boiled water. Remove from heat & mix in all other ingredients until combined. Using a spatula scrape out onto lined tray or mould & set in the fridge.
SuperTips: Try any fruits, nuts or spices or essential oils to alter the flavour of your chocolate. OR top with a some melted creamed coconut mixed with a little coconut oil, honey & vanilla for a no-fuss no dairy ‘white chocolate’ topping!
10 minutes to prepare. 10 minutes to set. Makes a massive block to feed a family.
