When I bought a juicer, to make my own fresh juice, I started to think what I could do with the pulp.

The moment I made carrot juice, I thought, I can try to imitate the carrot beignets I got at Piet Hein Eek Restaurant last week, with the leftover pulp!

Ingredients for carrot-lentil burger

 

Ingredients I used:

*carrot pulp

*lentils in a can

*fresh parsley

*1 onion.

*salt

*pepper

*olive oil.

* fresh spinach.

How to make?

Put all ingredients in a blender and chop it until it becomes of a smooth consistency.

Then use a spoon to take an amount out, and use your hands to form a round burger like figure.  Put a pan on the stove and on  medium heat add some light olive oil and the burgers in the pan.

Turn them around when the bottom gets a bit brown. (If your burger falls apart, just use a spoon to form it back to the original form. ) In another pan, let the spinach shrink. Serve together when ready. Add some yoghurt dressing (or another dressing) for extra flavor)

    Oh, this is such a good idea!! I want to try it too. I got a juicer last year (after reading all of Val’s recipes) and never knew what to do with the pulp other than put it in the compost. Never thought to make food with it, but of course it makes sense. And the burgers look great!

    BTW, you could add an egg to hold the burger together more, no? But I guess it would not be vegan then.

    Hi Nicole! I guess you can also use an egg to keep them together! The great thing about cooking is that there are no rules, you can always improvise along the way! As you can see, I used the leftover mash of these carrots, lentils and onions in my Meat Free Monday dish I made yesterday. I am just trying out all different recipes, and talk about it on this website with readers like yourself! Have a great day! XLonneke
