Bok Choy soup with crackers

Bok choy and mushroom soup

This is a yummy soup recipe when you feel a bit under the weather. It is vegetarian, but you can add tofu, fish or chicken to your liking!

Bok choy soup

Ingredients:

* Water

* Mushrooms

* Bok choy chopped.

* Tamari (or soy sauce) ( I used it by Manna)

* Seasalt/pepper

* Vegetarian bouillon cubes or powder, added to your liking ( I used the vegetarian bouillon powder by Vetara)

*Lots of parsley!

Let it simmer for a bit, and enjoy.

Tip: when you let it cool off and then reheat, it tastes even better!

p.s. the crackers are by Dr. Karg, the vegetarian cheese by Bastiaansen, and organic cucumber :)
