If you have been reading my posts, you know that I’m all about smoothie, juices and raw food recipes. I love to be creative in the kitchen and raw vegetables and fruits are huge inspiration to me.

Sometimes I go to supermarket without knowing what I want for dinner, I just buy what’s in-season and look for fresh ingredients. I don’t remember last time I bought something that is canned, bottled or frozen… Anyways, back to my veggies
When I get home, I simply put my produce on the table and start creating my meal: it can be blended soup, big salad, a smoothie, raw pasta made with zucchini (I will post a recipe soon) or just simple juice.
This morning I made beet-pineapple-cucumber juice. WOW! It came out so incredibly delicious! It’s a real treat!
Before you run to your juicer (I hope I inspire you so much, that you have to “run” to make my recipes) I must warn you, that after juicing all the ingredients, my kitchen turned out to be a crime scene – deep red color with drops of blood aka beet juice everywhere! Even on a ceiling.
But trust me, the mess is so worth the result!
Ingredients:
- 1 beet root
- 1/2 pineapple
- 1 larg cucumber
Steps:
Run thru a juicer all the ingridients. Serve in a tall glass cup to enjoy the gorgeous purple color!
LOVE, VAL

Wow! Val this looks great. You already inspired me to get a juicer
But I have a question – do you peel the beets first, or do you put them in the juicer as they are? One thing that prevents me from buying them is that any kind of beet-preparation always makes such a mess
Hello Valentina,
Thank you for this juice, you have to be inspired to mix the betrave with pineapple and cucmber.I’ll try to do.
(just a quick not to apologize for my last comment. To promote the marathon NY when you offer us a recipe was stupid and silly.I hope you forgive my clumsiness).
hey, Christophe! yes, you should definitely try this juice recipe. you will love it! my mom did! oh, regarding your last comment, dont worry ! i didnt get upset at all!! sending my love, kiss Val xx
Hi! I was wondering how you keep up your raw food/juice and smoothie based diet during the colder months in NYC?
hi! during winter time, i add more spicy food to warm me up. for instance, i use lots of ginger, cayenne pepper and turmeric. xx
And the beet goes on! I know what you mean about the turmeric stains, it’s in the curry I use alot, any tips to remove those?
Hi Valentina,
First of all thanks for the delicious recipes! My question about this one is whether I can make it in a blender as well?
Thanks for your time and effort!
Kind Regards,
Michelle
hi, Nicole! before i juice my beets, i wash them well and then peel the skin. it is a mess, but beets dont leave stains such as turmeric. i juice turmeric as well, but not often, just because it leaves bright yellow stains which is really hard to remove. love, val xx
